How To make Kip Filet with Sherry Sauce
6 juniper berries
1/2 teaspoon soy sauce
salt and pepper
to taste 5 tablespoons medium sherry
200 grams kip filets
1/2 tablespoon vegetable oil
2 tablespoons cold water
1/2 tablespoon cornstarch :
1 1/2 deciliter water
Put the juniper berries in a bowl. Crush them with the back of a spoon. Stir in the soy sauce, salt, pepper, and sherry. Lay the kip filets in the sauce. Let them marinate about 4 hours in the fridge, turning occasionally.
Remove the chicken from the marinade (reserving marinade) and dry with kitchen towels. Brush on 1/2 tablespoon oil. Grill over hot coals till done, about 10 minutes.
Meanwhile, mix cornstarch with 2 tablespoons cold water till smooth. In saucepan, mix the reserved marinade with 1-1/2 deciliter water. Bring to a boil. Stir in the cornstarch mixture; stir constantly till sauce thickens. S&P to taste.
Remove the chicken from the grill; let rest on a cutting board for about 3 minutes. Cut crosswise into pieces about 1/2cm thick. Arrange the slices on two plates. Pour the sauce over.
Good with rice and lemon carrots.

1 - Shallot, Fine Diced

2 Tbs - White Wine (Use a cheap White Wine, I used Chardonnay) Can be substituted for Vegetable Stock or Chicken Stock.
2 Tbs - Curly Parsley, Chopped (Can be substituted for Flat Leaf Parsley)
1 tsp - Thyme, Chopped
400ml - Full Fat Cream (Thickened Cream)

Champignonsaus maken? Met deze video leer je de ‘code’ kraken! Eerst maak je de fond, de basis voor de champignonsaus, daarna komen de champignons en de room erbij. Om het extra feestelijk te maken, gaat er een scheutje sherry door de champignonsaus. De saus is lekker bij vele soorten vlees en maakt kortom elk diner af. Zeker het kerstdiner. INGREDIËNTEN
2 tenen knoflook
50 g roomboter
1 zak fijne soepgroente (250 g)
1 pot paddenstoelenfond
1 beker slagroom (250 ml)
1 schaal kastanjechampignons (250 g)
3 el medium sherry
Fond maken
Snijd de knoflook doormidden. Verhit 25 g boter in een steelpan en bak de soepgroenten en knoflook zonder te kleuren op laag vuur 3 min. Voeg de fond toe en breng het geheel tegen de kook. Laat de smaak van de groenten op laag vuur 20 min. in de fond trekken, zonder deksel op de pan. Schenk de fond door een zeef en vang het vocht op in een pan. De groenten hebben hun smaak afgegeven en worden niet meer gebruikt.
Champignonsaus maken
Breng de fond aan de kook en laat op hoog vuur inkoken tot er nog 1/3 over is (125 ml). Dit duurt ca. 10 min. Voeg de slagroom toe en laat op middelhoog vuur tot de helft inkoken tot een egale, ingedikte saus. Dit duurt ca. 15 min.
Champignons bakken
Snijd de champignons in kwarten. Verhit ondertussen de rest van de boter in een koekenpan en bak de champignons op middelhoog vuur 5 min. Voeg de sherry toe en laat op hoog vuur 3 min. verdampen.
Champignonsaus serveren
Schenk de saus erbij, breng op smaak met peper en zout en warm nog 2 min. door. Lekker bij biefstuk en varkenshaas.
TIP: Als je een minder zoete saus wilt, kun je de sherry vervangen door 3 el droge witte wijn.
TIP: Als je een alcoholvrije saus wilt, kun je de sherry vervangen door 2 el citroensap.
