Ingredients:
24 ounces fresh or frozen cranberries
2 tart-sweet apples, finely diced
2-3 cloves garlic, minced
2/3 cup finely chopped sweet onion
1 1/2 teaspoons fresh grated ginger (or ground ginger if fresh is not available)
1 cup light brown sugar
1/2 cup honey
2/3 cup fresh tangerine juice (or orange juice)
Juice of 1/2 a lemon or 1 1/2 teaspoons orange zest
3/4 cup water
1/4 cup apple cider vinegar
1 teaspoon vanilla extract
3/4 teaspoon cinnamon
1/2 teaspoon pumpkin spice
Generous pinch of salt
Equipment:
2-3 quart pot with lid
Preparation:
1. Mix together all ingredients in a medium-sized pot and bring to a rapid boil over high heat.
2. Reduce the heat to low and cover with a lid for 30-40 minutes, stirring occasionally.
3. Uncover and simmer for another 15 minutes until thickened, stirring occasionally.
4. Let cool completely and then store in a glass container in the fridge until ready to use.
