How To make Kebab Digi (Pan Kebabs)
1 lb ground beef
1 md onion, grated
(1/2 cup)
1/2 ts salt
1/4 ts pepper
1/2 ts ground cumin
1/4 ts baking soda
Mix everything together and let sit for several hours, overnight, or for just a few minutes. Oil a shallow metal baking dish, put the kebab mixture into the pan and flatten out to about 3/4 inch thick. Then separate the meat with a spatula into strips 1 inch wide and 5 inches long. Leave 1/2 inch space between the strips. (to simulate meat on skewers) Broil for about 6 minutes, turning over once.Serve warm with rice. Recipe By : Rark :

This recipe is for 4 people
Ingredients:
500 g minced meat(beef or lamb or a mix of both)
2 medium onions
4 medium tomatoes
1egg
2 tbsp tomato paste
1 tbsp lemon juice
1 tbsp saffron water(the mixture of saffron and a few tbsp of boiled water)
spices: salt, black pepper, turmeric, garlic powder, paprika
Instructions:
First, mix the grated onion with the mincemeat in a bowl. Add in salt, black pepper, turmeric and egg. Mix and knead very well until everything is well combined. Then, cover the bowl with a plastic wrap and refrigerate it for half an hour.
Coat a frying pan with a little oil. Transfer the mixture into the pan. Spread it and fry it in any shape you like to serve them in. Once mixture starts releasing its juice, flip the kebabs and let their other side cook as well until they are brown.
In the meanwhile, in another pan, fry tomato paste for about 5_6 minutes. Season it with garlic powder and paprika. Next, add half a cup of hot water to it. Then, add saffron water and lemon juice as well and let it boil for a few minutes over medium temperature. After that, place the kebabs into the sauce and allow them to simmer together for a few minutes.
You can serve the kebabs with grilled tomatoes and also fried potatoes.

1 Tsp Zafran (Saffron)
1 Small Onion
Salt, Black Pepper, Persian Spice Mix (Advieh), Turmeric
4 Tbsp Vegetable Oil
3 Small Tomatoes, Pepper

1- Soak the rice with 1 tbs salt for an hour.
2- Soak the zafran (saffron) in boiling water for 30 minutes.
