1 1/2 c Applesauce 2 c Whole wheat pastry flour 1 ts Cinnamon 1/2 ts Nutmeg 1/4 ts Cloves 1 c Raisins 1 c Walnuts; coarsely chopped 1/2 c Butter 2/3 c Honey 2 ts Baking soda Warm applesauce over low heat. Mix together the flour, spices, raisins, and walnuts in a mixing bowl. Melt the butter in a small pot and mix in the honey. Stir into the dry ingredients. Stir the baking soda into the hot applesauce. This will foam up in a spectacular fashion. Add the batter in the bowl and mix thoroughly. Pour the batter into a well buttered 9 inch square cake pan. Bake in a preheated 350 degree oven for about 40 minutes or until a knife inserted in the center comes out clean. May serve with vanilla ice cream or cool and frost with cream cheese frosting. -----

Ingredients and preparation
2 cups flour
2 cups sugar (white or brown)
2 cups butter
2 cups grated yellow yam ????
2 tsp baking powder
6 eggs
4 cups soaked blended fruits
2 tbsp rum
1/2 cup fruit wine
3/4 cup browning
1 tbsp Vanilla
1 tsp salt
1 tsp mixed spice
1 tsp nutmeg
1 tsp Cinnamon
Cream butter and sugar.
Beat eggs thoroughly and add to the creamed butter and sugar.
Add flour 1 cup at a time (sifted flour).
Add baking powder and salt.
Add 2 cups grated yellow ???? yam
Stir in blended fruits, mixed spice, nutmeg, cinnamon, vanilla, rum, wine and browning until you get a smooth paste.
Bake350 degrees.

Our trip to Walt Disney World's Liberty Tree Tavern had me wanting more Johnny Appleseed Bread Pudding, so I decided to try my hand at making it at home. Here's the recipe I use, and that is party of five approved.

Grandmoms Apple Harvest Cake 4cups fresh diced apples 2cups sugar 3cups flour 1cup veg oil 4 eggs 1cup chopped walnuts 1tsp salt 1tsp cinnamon 1tsp nutmeg 1/4tsp cloves 1tsp vanilla Mix together the apples and sugar and refrigerate for at least 1 hour better if left for 2. Remember to stir periodically. Preheat oven to 350°F Sift together the dry ingredients Beat the eggs, add oil Mix till choppy, add walnuts and vanilla. Add apples and syrup and mix well. Pour into buttered and floured bundt pan. Bake for an hour. Cool, flip....enjoy!
