John Wayne Casserole!!! The Duke of Casseroles!!!
Combine 1.5-2 lbs of ground beef, one diced small onion and one diced bell pepper in a skillet. Sprinkle in salt, pepper, garlic and onion powder to taste. Brown the beef over medium heat. Drain grease off of ground beef. Then add 1/3 C water, 3 Tbsp taco seasoning, juice from a can of rotel, juice from a can of green chilies. Bring to a boil and then simmer for 10 minutes.
Combine the following ingredients in a mixing bowl. 2 Tbsp ranch seasoning powder, 8 ounces of cream cheese, 1 C pepper Jack cheese, 1/2 C sour cream, 1 can of chilies and salt/ pepper to taste.
Roll out one can or crescent rolls in a 9x13 baking dish. Pour ground beef mixture over the rolls. Then spread one can of rotel over the meat. Next, pour the cream cheese mixture over the rotel and top with shredded cheese of your choice. I used shredded Colby Jack. Then top with jalapeño slices.
Bake at 350 degrees for 40 minutes and then at 375 for 5 minutes. Uncovered.
Slow Cooker John Wayne Casserole (with tater tots)
SLOW COOKER JOHN WAYNE CASSEROLE (WITH TATER TOTS)
One of the most popular recipes on my website that I updated the video and photos. This casserole has a southwestern theme and plenty of cheese.
RECIPE:
INGREDIENTS:
32 oz. bag tater tots (frozen, not thawed)
1 lb. ground beef
1 small yellow onion diced
1 green bell pepper diced
1 oz. taco seasoning mix (I use Lawry's)
water add the amount of water to the meat that the taco mix says to add, 2/3 cup is what my packet said
16 oz. sour cream
8 oz. sharp cheddar cheese (divided, half in sour cream mixture and half on top at the end)
⅛ tsp. salt
¼ tsp. pepper
½ tsp. onion powder
optional toppings
diced tomatoes
bell peppers
SLOW COOKER SIZE:
6-quart oval
INSTRUCTIONS:
Spray a 6-quart oval slow cooker with non-stick spray. Add the tater tots down in a single layer. Set aside.
In a large skillet, set over medium high heat, brown the hamburger, onions and bell pepper. When the meat is browned, drain the fat. Add the amount of water the taco packet says to add to the meat (my packet said to add ¾ cup). Add the taco packet, and continue cooking and stirring until the meat and the seasoning has thickened.
Pour the meat mixture over the tater tots in the slow cooker.
In a medium sized bowl add the sour cream, salt, pepper, onion powder, and half of the cheese (this is about a heaping cup of shredded cheese, save the other half to top the casserole at the end.)
Spread this sour cream cheese mixture over the meat mixture in the slow cooker.
Cover and cook on LOW for 4.5 hours, without opening the lid during the cooking time.
After the cooking time is up add the remaining cheese evenly over the casserole.
Cover and let the cheese melt, this will only take about 5-10 minutes.
To serve, top with diced tomatoes.

Crockpot John Wayne Casserole
Colorful veggies light up this ground beef casserole. The only thing that sets this apart from the original recipe is that we enjoy the biscuits on the side. They're great for dipping!

Ingredients
2 lbs ground beef browned and drained
1 oz taco seasoning
1/2 cup water for taco seasoning (or the amount listed on back of packet)
3/4 cup sour cream
3/4 cup mayonnaise
8 oz cheddar cheese shredded and divided
1 large onion halved and sliced
3 medium tomatoes sliced
1 medium red bell pepper halved and sliced
4 oz canned sliced jalapenos
fresh jalapeno slices and cilantro for garnish
Instructions
In a large skillet on the stovetop over medium-high heat, brown the ground beef and drain of excess fat. Return to skillet and combine with taco seasoning and water. Continue cooking for 5 minutes.
Pour the ground beef into the bottom of the crockpot.
In a bowl, combine sour cream, mayonnaise, half of the cheddar cheese, and half of the onions. Stir well and set aside.
Saute remaining onions and bell peppers on the taco meat pan until slightly tender.
Layer ingredients in the following order within the crockpot: taco meat, tomato slices, bell pepper and onion mixture, Jalapeno peppers, sour cream mixture.
Cover and cook on high for 3-4 hours. Just before serving, sprinkle with remaining cheddar cheese, recover and allow to melt for 15 minutes.
Garnish with fresh jalapenos, tomatoes, cilantro, and/or more sour cream.
Notes
Serve this casserole with a side of homemade or canned biscuits for dipping.
Store in an air-tight container kept in the refrigerator for 3-4 days.
