● Zwiebel - 1 Stck
● 3 Knoblauchzehen
● Karotte - 1 Stück

● Dosentomaten - 200 ml
● Pasta - 250 g
● Petersilie
● Salz, Schwarzer Pfeffer, Italienische Kräuter

⭐️ Zucchini pasta, as in pasta with zucchini, is a creamy and easy one-pot recipe to have as a tasty weeknight dinner for the whole family.
⭐️ Ingredients
Main Ingredients
2 tablespoons extra virgin olive oil
1 yellow onion
4 cloves garlic
6 cups (27 oz) zucchini grated with the large holes of a box grater
1 teaspoon oregano or thyme
1 teaspoon salt or more to taste
½ teaspoon black pepper
12 ounces pasta rotini, fusilli, farfalle, penne, or other
3 cups vegetable broth start with 2 cups or 500 g and add more if necessary
½ cup parmesan cheese grated, or dairy-free cheese
½ cup greek yogurt or dairy-free yogurt
¼ packed cup basil leaves
Garnish with
1 medium lemon the grated zest
2 tablespoons pinenuts

99 year old Marietta is still going strong - we first met her in Calabria 18 months ago - and we caught up with her in Rome. This is one of her regular pasta dishes which everyone can adapt and make their own. Stew onion, carrot and celery before adding about 500g of greens like chard, cabbage, dandelion, kale and so on. Add a fresh red chilli if you like. Pour over some tomato passata, season with salt and leave to simmer for 20 minutes.
For her pasta, Marietta uses semola rimacinata/durum wheat flour and water. Allow 300g flour, and 145g of water with a pinch of salt.

400 g (14 oz) dried pasta shapes (I used rigatoni)
1 tbsp vegetable oil
1 large red onion peeled and chopped into wedges
1 red bell pepper de-seeded and chopped into large chunks
1 yellow bell pepper de-seeded and chopped into large chunks
1 courgette (zucchini) chopped
pinch of salt and pepper
2 cloves garlic peeled and minced
1 tbsp tomato puree
½ tsp dried oregano
½ tsp dried thyme
2x 400 g (14 oz) tinned chopped tomatoes
120 ml (1/2 cup) double (heavy) cream
100 g (3 packed cups) fresh baby spinach
100 g (1 packed cup) strong cheddar cheese grated
100 g (1 packed cup) mozzarella grated
Small bunch parsley roughly torn

Ingredients:
1 tbsp Olive oil
1 tbsp Butter
1 tbsp Garlic Paste
1 Onion, finely chopped
1/2 Yellow Capsicum, cut into squares
Green Capsicum, cut into squares
2 Tomatoes, boiled&pureed
2 cups Water
100 gms Spaghetti
1/2 cup Baby Corn, chopped
1 cup Broccoli florets
1 tsp Oregano, dried
8-10 Basil leaves
1 tsp Red Chilli Flakes
1/4 tsp Pepper Powder
6-7 Cherry Tomatoes
3 tbsp Cheese, grated
3/4 cup Fresh Cream
Salt to taste
Method of preparation:
Heat oil in a vessel, add butter, garlic paste, give it a mix.
Add onion and cook it for 2 minutes.
Add yellow, green capsicum and cook it for a minute.
Add tomato puree, cook it for 3-4 minutes.
Add water, once the water comes to a boil, add spaghetti, baby corn, broccoli and cover it and cook it for 8 minutes.
Add oregano, basil leaves, red chilli flakes, pepper powder, cherry tomatoes, cheese, fresh cream, salt, give it a good mix and let it cook for 3-4 minutes.
Our Creamy One Pot Spaghetti is ready to serve.
