20 grams instant yeast
500 grams all purpose flour

Simple Italian Bread From Scratch using a KitchenAid Stand Mixer 2020 and Our Favorite Margarita!

You're going to love this recipe. Super cheap, easy. A great 'first' bread with minimal ingredients needed. Makes 2 Loaves.
Simple Italian Bread (with a KitchenAid)
Ingredients
1 Tbsp (or 1 packet) active dry yeast
2 cups warm water
2 tsp sugar
1 Tbsp salt
5.5 cups flour (Divided)
Topping just before baking: 1 egg or olive oil, kosher salt, dried basil/Italian seasoning, garlic powder
Directions
• Dump into your Kitchenaid: yeast and warm water. Mix and wait 3 mins.
• Dough hook on, at low (2) speed add sugar, salt and 3 cups flour.
• Let it mix for 6 mins. Scrape the sides so everything mixes well.
• Add the last 2.5 cups of flour for 6-8 more mins. After a couple mins it should look like a pizza dough ball. If dry, rough add water 1 tsp at a time until it looks smooth.
• Get a bowl twice as big as your dough ball. Drizzle oil around it.
• Remove the dough from the Kitchenaid and with your hands form it into a ball. Toss it in the oiled bowl so that it is covered lightly in oil.
• Cover and let rise in a warm place until doubled (about 1 hour).
• With flat open hands, squish the ball down softly. Cut in half.
• Place each loaf seam side down on a greased baking sheet (or parchment). Gently form loaves. Cover and let rise for about 30 mins.
• Preheat oven to 400°.
• Just before placing in oven: Brush an egg wash (scrambled whole egg) all over the bread. Sprinkle kosher salt, dried basil/Italian seasoning and garlic powder to your liking.
• With a sharp knife, make four ½” deep slashes across top of each loaf.
• Bake 20 mins, the bottom should be golden brown.
• Remove from pan to cool on stone countertop or cooling rack.
For our favorite:
Spicy, Smoky Margarita
3 Parts Tequilla (we prefer 2 parts serrano infused gold tequilla, 1 part Mezcal)
2 Parts Fresh Squeezed Lime Juice
1 Part Simple Syrup (make using a 1:1 ratio of sugar and water boiled until clear)
Shake aggressively with ice and serve in a Tajin or Kosher rimmed glass over ice.

Caramelized Onion Bread Recipe
This Caramelized Onion Bread is by far one of the best bread recipes. This bread is soft and fluffy and it smells wonderful while baking. The caramelized onion brings such a wonderful flavor.

Ingredients
Makes 1 loaf
Caramelized Onion
1 large onion, chopped or thinly sliced
1 bunch green onion bulbs, chopped
2 tbsp olive oil
salt
Dough
4 cups (500g) flour
1 tsp (5g) salt
25 g fresh yeast (2 1/4 tsp active dry yeast)
1 bunch green onion leaves, finely chopped
1 1/3 cup (320 ml) warm water

1. In a frying pan heat oil over medium heat. Cook onion until soft and golden brown, for about 7 minutes. Season with salt. Set aside to cool.
2. In a large bowl, mix flour with green onion leaves. Dissolve the fresh yeast with salt and 1/3 cup (80 ml) water and add to the flour mixture. Add the rest of 1 cup (240 ml) water, mix everything together then add caramelized onion and knead until the dough is smooth and pulls away from the sides of the bowl. Cover it and let it sit for about 1 hour at room temperature to rise until doubled in size.
3. On a floured surface roll the dough into a loaf. Place in a 6x10 inch (15x25cm) baking tray and leave to rise again for 30 minutes. A regular loaf pan should be as good. Optional sprinkle salt and few green onion chopped leaves on top.
4. Preheat oven to 470F (240C). Place a small pot with water at the base of the oven to create steam.
5. Bake for 15 minutes with steam then remove the pot with water from the oven.
6. Reduce oven temperature to 450F (230C) and bake for another 10-15 minutes.
7. Cool on a wire rack. Let the bread cool completely before cutting.

Italian Easter bread: sweet and fluffy!
INGREDIENTS 2 1/4 tsp dry yeast
1 1/4 cup warm milk
75 g butter
2 eggs, beaten
1/2 cup sugar
A pinch of salt
4 cups flour
Pinch of orange zest
egg wash
4 painted Easter eggs
sesame seeds
METHOD Mix all the ingredients for the dough and gradually add flour.
Let rise for 1 hour in warm place
Divide into 6 parts, make strips and form the bread.
Let rise for 1 hour
Grease with egg wash and sprinkle with sesame
Put painted egg in the middle of bread and bake 170°C/340°F for 20 min.
