Japanese style tofu scramble | Iridoufu with vegeterian dashi stock (SIMPLE!)
Iridoufu is essentially a tofu scramble. You can add all the things you normally might add to an omelette or scrambled egg, and you can even include eggs too.

For todays video we kept this tofu dish meat free (vegan) by using a vegetable dashi. if you can't get vegetable dashi, you can use 1/4 tsp-1/2 tsp better than boullion vegetable stock mixed in a little water or konbu dashi
konbu dashi (stock), if you didnt know, is a dashi thats made with kelp (a type of seaweed) which adds a good base flavor that'll have you eating this iridoufu again and again!????
The texture is almost like egg whites, but unlike egg whites, it’ll never be rubbery.

INGREDIENTS:Serves 2
1/2 medium onion, sliced
1/4 cup frozen peas
1/2 cup shrimp
1 clove garlic, minced
3/4 cup uncooked rice
1 cup chicken stock
1 tablespoon olive oil
salt and pepper to taste
DIRECTIONS:
Saute the garlic for a few minutes in olive oil. Stir fry onions and green peas for 2-3 minutes. Add shrimp and cook for 1 minute. Make a well in the center. Add rice. Add chicken stock on top of the rice. Cover and cook on medium-low heat for 20 minutes. Stir to mix ingredients. Serve hot and enjoy!

<材料>(2人分)
・タマネギ M1/2個(スライス)
・グリーンピース 1/4カップ
・むきえび 1/2カップ
・にんにく 1かけ(みじん切り)
・お米 3/4カップ
・チキンストック 1カップ
・オリーブオイル 少々
・塩コショウ
<作り方>
・にんにくのみじん切りを、オリーブオイルで狐色になるまで炒めます
・タマネギ、グリーンピースを入れて、タマネギが半透明になるまでざっと炒めます
・むきえびを入れて、赤く色が変わってくるまで炒めます
・具をフライパンの周囲に寄せ、中心部にお米を入れて平らにします
・チキンストックを米に満遍なくかけ、中火にかけます
・沸騰したら弱火にして20分、そのまま炊き込みます。途中、完全に水分がなくならないよう火加減に注意します(焦げ付きます)
・炊き上がったら具とライスを混ぜ込み、塩コショウで味付けをします。
これで出来上がり。

100g Chicken Breast or Thighs, cut into 1cm cubes (3.5 oz)
1 package of Firm Tofu (300g/10.6 oz)
30g Carrot (1.1 oz)
3 Dried Shiitake Mushrooms, small size, rehydrated
30g Long Green Onion, chopped (1.1 oz)
30g Snow Peas or substitute: snap peas, string bean pods or green peas (1.1 oz)
2 Beaten Eggs
1 tbsp Sesame Oil
Salt
2~3 tbsp Shiitake Liquid
1 tbsp Sugar
1/2 tsp Salt
1 tsp Soy Sauce

Tofu Scramble Recipe - Easy & Delicious!
This is a very easy & simple tofu scramble recipe. Sometimes I get more fancy with it, adding mushrooms, spinach, chives, etc. This is my simple recipe, but I will be doing a couple more recipe videos, since I enjoy making this dish a few ways.
I added a bit too much turmeric, see recipe below for better measurements. In the video I added a whole tbsp, you should add 1/2 tbsp. I didn't mind though, since I enjoy turmeric and it's a great anti-inflammatory. It just looked really orange, lol.
Ingredients
-1 package of tofu, soft, firm, or extra firm. I like using firm.
-1 onion
-tomatoes (optional) I use around 1/2 cup, but use as much or little as you want.
-1/2 tbsp of turmeric
-1/2 tsp of garlic powder (or you can use fresh)
-salt & pepper to taste
-I sauteed the onions and cooked everything in just a little water. I like to use water or low sodium veggie broth in cooking, instead of oil. But, you can feel free to cook this in olive oil, coconut oil, or soy butter. Whatever you want.
*cumin and chili powder also go nicely too.
