How To make Iridofu
1 tb Oil
1 sm Onion, diced
1 sm Carrot, diced
24 oz Tofu, crumbled
2 tb Roasted sesame seeds
1/2 ts Salt
2 ts Shoyu
1 ds Pepper
Heat a wok & coat with oil. Add onion & carrot & saute for 3 minutes till onion is slightly browned. Add crumbled tofu & the remaining ingredients. Stirring constantly, saute over medium low heat for a bout 5 minutes, or until the tofu is light & dry. Variations: Add 1/4 c of any of the following: parboiled green peas; shiitake mushrooms; diced bamboo shoots. Also try adding 1 ts grated ginger. Shurtleff & Aoyagi, "The Book of Tofu"

Ingredients: Serves 4
2 blocks firm tofu
1 stick konbu
1 tablespoon grated ginger
1/4 cup sliced green onions
1/4 cup bonito flakes
1 teaspoon fresh yuzu peel, sliced ( or lemon )
Instructions:
Cut tofu into 2-inch cubes. Put 3 cups water in a large pot. Add konbu and tofu and bring to simmer. Just before boiling, take out konbu. Discard konbu. Skim off foam on top of the water.
Serve with condiments and soy sauce. Yudofu is great with some white rice, vegetables pickled vegetables.

湯豆腐の作り方です。
材料はお好みの豆腐の他、
薬味として、ネギ、柚子、鰹節、生姜
ダシを取るための昆布を使います。
(薬味の準備)
ネギは小口切りなどにします。
・柚子は皮を剥いて千切りまたはみじん切りにします。
・生姜はすり下ろします。
(作り方)
鍋に水をカップ5杯入れます。
15cm程度の昆布を1本入れます
弱火でゆっくりと茹でます
アクが出たらすくい取り、豆腐に火が通ったらできあがり。
お薬味を載せて、好みの醤油でお召し上がりください。

Tofu is a good source of plant-based protein that can be used in all sorts of ways. It’s a great addition to vegetarian and vegan diets, but even if you’re a meat eater, I urge you to try it.

INGREDIENTS:
Firm tofu: 200 grams (Crushed/Scrambled)
Carrot: 150 grams chopped (1 carrot)
Cooking oil: 1 tbsp
Cashew: (15 to 20)
Ginger: 1 tbsp
Garlic: 5 large chopped (1 1/2 tbsp)
Green chili: 2 chopped
Chili flakes: 1 tsp
Onion: 1 small chopped
Pepper powder: 1/2 tsp
Chili powder: 1/4 tsp
Curry leaves: 1 spring chopped
Salt to taste
INSTRUCTIONS/DIRECTIONS:
1. HEAT oil in a pan over medium heat. Fry cashews till they become light golden brown.
2. Sauté ginger, garlic, green chili and curry leaves, till they turn aromatic.
3. Add chili flakes, onion and little salt to taste and sauté until onions are translucent.
4. Now add carrot and stir fry for a minute or two without overcooking them.
5. Add the Scrambled tofu, pepper powder, chili powder and stir fry for 5 minutes, give a good mix and turn off the heat.
RECIPE NOTES:
• Do not overcook the veggies and tofu.
