How To make Indian Tacos
1 1/2 c Dried anasazi beans
6 ea Pieces Indian Frybread,
about 6" in diameter 1 1/2 c Mache or arugula, washed &
:
stemmed 1 lg Red ripe tomato, sliced
2 ea Ripe avocados, halved &
sliced 1 ea Red onion, thinly sliced
1 ea Bunch red radishes, sliced
24 ea Golden yellow plum tomatoes,
:
halved 6 ea Green anaheim chiles
1 lg Red bell pepper, or red
-- anaheim chile To prepare the anasazi beans, soak overnight in water to cover. The next day, drain the beans and place them in a saucepan with fresh water to cover. Bring to a boil, reduce the heat, and let the beans simmer until the skins break, about 3 hours. It may be necessary to add water as the beans cook to prevent them from burning and sticking. After the beans are cooked, remove from the heat and set aside. You should have about 3 cups cooked beans. While the beans are cooking, roast, seed, and devein the chiles and the pepper. Leave chiles whole; slice pepper lengthwise into six strips. To start building the tacos, place 1/2 cup cooked beans on each piece of frybread. Add 1/4 cup greens per taco, followed by a red tomato slice. Add 4 slices avocado and 1 slice red onion, separated into rings. Follow with radishes and 4 golden yellow plum tomatoes per taco, and top with 1 roasted green chile and 2 slices roasted red pepper or chile. You can vary the toppings and the order in which the taco is built.

Indian Fry Bread – makes about 12
4 cups all-purpose flour
1 teaspoon salt
2 tablespoons baking powder
3 tablespoons Canola or vegetable oil
1 ½ to 2 cups warm water
4 tablespoons butter, melted
Oil for frying
-In a mixing bowl, combine the flour, salt and baking powder.
-Stir in the oil and 1 ½ cups of the warm water just until its combined. With your hands begin mixing and needed. You may need to slowly add more water to create a soft and slightly tacky dough.
-Cover the dough and let rest 2 hours in a warm location.
-Pour the butter over the dough and knead for a couple minutes.
-Pinch the dough off slightly larger than golf ball-sized. Roll in your hand to create a ball. And place on a floured surface.
-Pat each ball out slightly and then roll out thinly with a rolling pin.
-Fill a cast iron skillet with 1 – 2 inches deep with the fry oil and heat to about 325 degrees.
-Fry the bread until lightly golden brown on each side. Cool slightly on a wire rack or paper towel.
For Sweet Bread:
While the bread is still warm, spread with softened butter and top with powdered sugar, cinnamon and honey.
For Indian Tacos:
Top with Beans (recipes linked above) combined with 1 lb. hamburger meat. Topped with chopped onions, tomatoes, lettuce and any additional toppings.

In this episode of In The Kitchen With Matt, I will show you how to make Navajo Fry Bread. This easy fry bread dough recipe is what is used for Navajo Tacos. Frybread has been around for many many years, and several different cultures have their own version of it. This is a traditional fry bread used by the Native Americans. This particular iteration was created in 1860s by the Navajo Nation. They were given flour, salt, baking powder, and lard by the US Government to sustain them on their Long Walk from Arizona to New Mexico. I live in Arizona, about 4 miles from a Reservation. They have fry bread stands located throughout that particular reservation where they sell Navajo Tacos. In Utah and Southern Idaho they call these scones. So yummy! They are super easy to make, if I can do it, you can do it. Let's get started!

3/4 to 1 cup of water. Start with 3/4 cup.
