4 Eggs 1 Stick margarine, softened 1 t Vanilla 2 c Milk 3/4 c Sugar 1/2 c Flour 1/8 ts Salt 3/4 ts Baking powder 1 c Coconut (reserve 1/2 cup) Put all ingredients into a blender and blend 30 seconds. Grease and flour 10-inch pie pan or 9-inch square pan. Pour batter into pan and sprinkle remaining coconut over batter. Bake at 350 degrees for 40 to 45 minutes and coconut is golden brown. This easy peasy coconut pie is super easy to make. You can use a ready made frozen pie crust or you can make your own. I made a mistake in the video and said that it calls for 1/2 cup of butter, but what I meant to say was 1/2 stick. I have corrected it in the description below.
