Impossible Vegetable Pie
Ingredients
2 cups fresh broccoli, washed, cooked and drained
½ cup chopped yellow onion
½ cup chopped green onion
½ cup chopped red bell pepper
1-1/2 cup milk
1 cup Bisquick
2 teaspoons red pepper flakes
1 teaspoon dried oregano
1 cup grated cheddar cheese
2 eggs beaten
1/4 teaspoon sea salt
Direction: Preheat oven to 400 degrees. Lightly grease 10-inch pie plate. Cook broccoli in ½ cup of boiling add salt to taste. Cover saucepan and cook for 4 minutes. Chopped onion and bell pepper,
In a small bowl, beat eggs, add milk, cheese, oregano and red pepper flakes. Add broccoli, onion and bell pepper into pie plate and stir. Pour mixture over vegetables. Bake at 400 F for 45 minutes or until golden brown. Let stand 5 minutes before serving.

Recipe here: Stephanie Jaworski of Joyofbaking.com demonstrates how to make a Ham and Egg Pie. A friend was kind enough to give me this recipe more than 25 years ago and it's still a family favorite. It's a savory pie with a beautiful golden brown crust and inside slices of ham are layered with eggs, chopped green onions, grated parmesan cheese and lightly spiced with crushed red pepper, along with salt and pepper. While we love to have it for breakfast, it also makes a nice weekday dinner served with a tossed green salad and fresh bread.
