How To make Ice Box Cookies
1 c Butter
2 c Brown sugar
2 Eggs
1 ts Baking powder
1/2 ts Salt
3 c Flour
1/2 ts Soda
1 c Nuts; finely chopped
Mix well in order given one at a time. Press and shape dough into three loaves, about 2 inches square and 5 inches long on sheets of waxed paper. Wrap tightly in waxed paper and put in refrigerator. Chill at least 2 hours. To bake cut chilled loaf in thin slices. PLACE ONE INCH APART on ungreased baking sheet. Bake 375~ for 10-12 minutes. 1973 Indiana State Fair Winner.

[INGREDIENTS]
Makes about 100 cookies (Egg size: 1.25 width 1.75 height before baking)
Today: 5 designs, 15-17cm long each.
• Unsalted butter: 339g (3 US sticks)
• Powdered sugar: 255g (9oz)
• Salt: 1/2 tsp
• Whole egg (Large): 1 1/2 eggs
• Egg yolk (Large): from 1 1/2 eggs
• Cake flour: 525g (18.5oz)
• Almond flour: 115g (4oz)
• Colorings: Use any colors you like!
Egg wash as a glue
• Egg white: Water = 1:1
Bake at 340F | 170C for about 10 mins
And turn it down to 330F |165C and bake for another 10 mins or until the edges are slightly toasted.

DOODLE ICEBOX COOKIE
Yield: 24 pieces

INGREDIENTS
Cookie Dough:
170 g Shortening
200 g Granulated Sugar
50 g Whole Eggs
2 tbs Milk
1/2 tsp Almond Extract
380 g All-Purpose Flour
2 tsp Double Acting Baking Powder
1/2 tsp Salt
Food Colouring
Royal Icing:
120 g Icing Sugar
3 tsp Milk
1 tsp Light Corn Syrup or Honey
1/4 tsp Almond Extract
Food Colouring
INSTRUCTIONS
Cookie Dough
1. Cream the shortening and sugar together until well combined for about 3 minutes (there are gonna be much fluffier when you're done).
2. Add in the eggs, along with milk and extract. Mix until all that liquid is well incorporated into the butter and sugar.
3. Add the sifted dry ingredients; the all-purpose flour, baking powder and salt. Mix well (the mixture will be a little bit crumbly at first, but keep mixing and it will come together just fine).
Note: To get a flakey and snappy cookies, don’t overwork this mixture; you’re kind of just incorporating the flour.
4. This cookie dough is ready to use (it doesn’t require any dough chilling), colour your cookie dough and to shape it ~ kindly follow instructions according to the video.
5. Store the completed cookies in the freezer for at least 30 minutes.
6. Cut the frozen cookies for about 5 mm thick (make sure that you use a very sharp knife), place it on a baking try and then store them in the fridge for 30 minutes before baking (to maintain the details).
7. Bake them in the preheated 160°C oven (baking time will vary depending on the size);
and don’t forget rotating your pans halfway through baking.
* Bake the cookies until the the bottom edges are just lightly browned (don't overcooked the cookies as the colour detail is really crucial).
8. When take out from the oven,cool them on the baking sheets for 5 to 10 minutes and then transfer to a wire rack to finish cooling.
Royal Icing
1. Simply combine all the ingredients together.
*Note: If it's too runny, add some icing sugar and if it's too thick, add the amount of milk 1/4 teaspoon at a time until you reach the desire consistency.
You do wanna work a little bit quickly with royal icing coz it will sets hard or else cover it with clingwrap.
2. Colour it, transfer to a piping bag and then draw the outline . Use a damp brush to correct the details.
NOTES
Baked cookies may be stored in an airtight container at room temperature for up to 1 week. Make sure to let the icing fully harden before stacking the cookies.
It also freeze well for up to 3 months, thaw to room temperature before serving.

アイスボックスクッキーは難しいことはないんですが、
一つだけコツがいるとしたら、
バターをいかにポマード状(クリーム状)にするか…です!!
冬場なんかは早めに冷蔵庫から出していたとしてもカッチカチ、
レンジでチンも、やりすぎて溶かしすぎてしまいがち…
暑すぎない暖かな場所で
やや柔らかくなるまで外に出しておくのが一番ですが、
そんなちょうどいい場所をさがすのも大変です。????
今回は、暖房がうっすら効いている場所で
3時間ぐらい出しておきました✨✨
指で押すとぶにゅっとなるぐらいが最適です(*˘︶˘*).。.:*♡

【材料】
バター150g
無塩バター
粉糖100g
全卵1個
薄力粉125g
薄力粉125g
ココアパウダー13g
バニラエッセンス少々
チョコチップお好みの量
ローストアーモンドダイスお好みの量
【作り方】
※オーブンは使用前に予熱しておく。材料は常温に戻しておく。
①柔らかくしたバターをクリーム状にし粉糖を加えてよく混ぜる。
②溶きほぐした卵を数回に分けて加えて混ぜる。
③生地を2等分にして、薄力粉だけのものと、ココア入りの薄力粉をそれぞれ加えて混ぜる。
④ラップをして冷蔵庫で一時間以上休ませる。
⑤台の上に打ち粉をして軽く練り、お好みの形に成型していく。
⑥冷凍庫に入れ一時間以上冷やし固める。
⑦7ミリ~1センチほどにカットし予熱しておいた170度のオーブンに15分入れて焼く。
【Ingredients】

【Recipe】
*Heat the oven to 170℃. All the ingredients need to be at room temperature.
1. Cream the butter and sugar.
2. Add beaten egg little by little, and mix well.
3. Divide the dough into a half. Add cake flour. Add cake flour and cocoa powder to the other half.
4. Wrap with plastic wrap and let it rest in the fridge for more an hour.
5. Dust the desk and tools with bread flour. Knead the dough a little to soften, and shape the dough.
6. Let it chill in the fridge for more than two hours.
7. Cut the dough into 1cm slices, and bake at 170℃ for about 15 mins.

바닐라 반죽은 한번에 만들어 3개로 나눠 토핑만 다르게 했고 녹차와 초코 반죽은 따로 만들었어요~
어울릴만한 재료를 다양하게 넣어 구웠더니 색도 예쁘고 맛도 좋더라구요~
냉동실에서 너무 오래 굳혀 딱딱하면 살짝 녹은 뒤 썰면 잘 썰린 답니다~
너무 단단한 식감의 쿠키는 아니라서 바삭거리며 부서지는 느낌이에요~
만들기도 쉽고 비주얼도 예뻐서 선물하기에 딱 좋은 것 같아요~

▶레시피
1. 무염버터를 부드럽게 풀고 슈가파우더와 소금을 넣고 섞은 뒤 달걀노른자와 바닐라익스트랙을 넣고 섞는다.
2. 박력분과 아몬드가루를 체 쳐 넣고 한덩이로 뭉치도록 섞은 뒤 3개로 나눈다.
3. 각각의 반죽에 크랜베리, 건조 딸기, 오레오를 넣고 섞은 뒤 유산지로 동글게 모양을 잡아 냉동실에서 1시간 정도 굳힌다.
4. 같은 방법으로 초코와 녹차 반죽도 만들어 굳힌다.
5. 굳힌 반죽 겉면에 설탕을 묻히고 썰어 오븐 팬에 올린 뒤 170도 예열한 오븐에서 15분 정도 굽는다.
