How To make Hungarian Potatoes
10 ml 2 tsp olive oil.
1 lg Onion peeled and chopped.
2 Cloves garlic, crushed.
1 lg Aubergine diced.
2 Red peppers de-seeded and
Sliced 15 ml 1 tbsp paprika.
100 g 4 oz mushrooms sliced.
400 g 14 oz chopped canned
Tomatoes 45 ml 3 tbsp tomato pure.
Sprig of thyme. 450 g 12 oz potatoes scrubbed and
Cooked until just tender. Ground black pepper. 30 ml 2 tbsp water.
Heat the oil in a large casserole dish. Add the onion and cook over a low heat for 10 minutes or until brown. Add garlic and cook for a further 10 minutes. Add aubergine and pepper. Cover with a lid and cook for a further 5 minutes. Add the paprika and cook for 2 minutes. Mix in the remaining
vegetables, tomato pure, thyme and 2 tbsp water and simmer for 45 to 60 minutes or until cooked. VARIATIONS. Chic pea hotpot. Delete the potato from the above recipe and add 14 oz 400 G cooked chic peas. Add 1 tsp ground cinnamon as well. VARIATION Ratatouille Delete the potatoes and mushrooms from the above recipe and add 1 lb 450 G sliced courgettes at the same time as the aubergine. Delete the paprika.

Ingredients:
- 250 grams of pork fat
- 1 kg fattier pork meat (back, belly, leg, ribs)
- 2 kg de cartofi
- 500 grams tomato puree or mashed tomatoes
- 4-5 tbsp capya peppers puree (optional but recommended)
- 1/2 celery root
- 3 large onions
- 3 large carrots
- 3 capya peppers or bell peppers
- 7-8 cloves of garlic
- sald and pepper
- 4 tbsp cumin
- 3 tbsp smoked paprika
- 5 tbsp sweet paprika
- 2 tbsp thyme
- 2 bay leaves
- 1 handful of fresh chopped parsley

I cooked on the weekend this authentic Hungarian Layered Potato dish with eggs and Hungarian sausage, just like my Mom in Budapest makes it. It's our go to go recipe. In Hungarian we call it rakott krumpli. It's a fairly quick, super simple recipe because you can do other things in the meantime while the stove and oven does the work. It can be in your monthly budget because it's pretty cheap to make and done with ingredients readily available in your kitchen already. Enjoy!

Rakott Krumpli (Hungarian Scalloped Potatoes)
Filling
6 large potatoes, slice
1 tbsp vegeta
1 tbsp montreal steak or chicken seasoning
3/4 milk
3/4 c sour cream
1/3 c bread crumbs
1 tsp garlic powder
1 medium onion, slice
1 c cooked beef sausage (for pizza topping)
1/2 c grated cheese
Base
2 large potatoes, slice
A generous pinch Vegeta
Topping
1 c cooked beef sausage
1/2 c grated cheese
Montreal chicken seasoning, to taste
Preheat oven 375 F
Place BASE on baking pan (lined with parchment paper)
Mix FILLING in a bowl, then place on pan, covering BASE
Spread TOPPING covering FILLING
Bake for 40 mins, covered
Take off cover, and bake for another 30 mins
