HUMMUS
Ingredients:
400 gr canned chickpeas (~14 oz, ~0.9 lb)
6 tablespoons tahini
1 lemon
6 cubes of ice
2 garlic cloves
2 tablespoons extra virgin olive oil
Half teaspoon salt
to garnish:
ground sumac
ground cumin
2-3 tablespoons extra virgin olive oil
Parsley
Directions:
- For a perfectly smooth hummus first you need to peel the chickpeas. Add 400 gr
canned chickpeas in a large bowl and rub to take the skin of.
- Fill the bowl with water and skins will start to float. When you drain, skins will group
on water and it will be much easier to collect.
- Add peeled chickpeas, 2 cloves of garlic, half of a teaspoon salt, 6 tablespoons of
tahini and 2 tablespoons of extra virgin olive oil to food processor.
- Squeeze a lemon juice and run for 7-8 minutes on low-medium speed.
- While the food processor is working the hummus will get warm. To avoid that add 6
cubes of ice gradually. ıce will help to make a smooth hummus as well.
- After a couple of minutes hummus will be ok but not smooth enough. Don’t give
up and continue until the hummus is creamy. You can run on high speed at this stage.
- Taste and adjust the lemon, tahini and salt to your taste. Garlic and olive oil always
need time to settle. If you have 2-3 hours before eating the taste will be better.
- When the hummus is ready put on serving table and make a little crater with the
back of a spoon.
- Sprinkle ground sumac, cumin and parsley leaves. Last but not least pour 2-3
tablespoons of extra virgin olive oil.
- Enjoy your creamy, tasty, simple hummus with your lavash or chips as your spoon!

La receta de mi padre, que nació en la hermosa ciudad de Damasco.
Tiempo de elaboración: aprox. 20 min
Tiempo de reposo: aprox. 2 h
Dificultad: simple

Ingredientes para 2 porciones:
1 lata de garbanzos de aprox. 400-500 g
2 cucharadas de pasta de sésamo (tahini)
El zumo de 2 ó 3 limones
4 dientes de ajo
1 manojo de perejil - no es estrictamente necesario pero puede usarse para decorar
Aceite neutro, no amargo
Comino molido, al menos 2 cucharadas
1 guindilla picante y seca
1 cucharada de curry
Sal y pimienta, pimienta blanca
En su caso, pimentón en polvo rojo y picante
Pan de pita, turco o árabe, crujiente y horneado
En primer lugar, hay que decir que también puedes utilizar garbanzos frescos. Sin embargo, esto requerirá un tiempo de remojo y cocción algo superior. En mi opinión, la diferencia en sabor no justifica el tiempo adicional. De hecho, mi padre me dijo que ya lo había hecho con garbanzos enlatados en el mismo Damasco. Sólo se debe tener en cuenta que los garbanzos sean de buena calidad.
En primer lugar, colar los garbanzos y reservar el líquido.
Agregar los garbanzos con la tahina (pasta de sésamo), el ajo, el zumo de limón (no todo a la vez, es mejor condimentar progresivamente), la guindilla, el curry, la sal y 2 cucharadas de comino en la licuadora. En primer lugar, añadir un vaso del líquido de los garbanzos y 3-4 cucharadas de aceite y mezclar.
Si la mezcla resulta demasiado espesa, añadir el líquido de los garbanzos gradualmente hasta que esté cremosa. Sazonar con pimienta blanca, sal, comino y el zumo de limón.
Cubrir con papel de plástico transparente y dejar reposar durante al menos 2 h. ¡Esto es muy importante!
Verter en un plato hondo y adornar con perejil. Si lo deseas, puede mezclar un poco de pimiento rojo con aceite y espolvorear por encima antes de servir. Le da un aspecto fantástico y un gran sabor, pero también aumenta las calorías de un plato que ya es fuerte de por sí.
Para disfrutar con pan de pita recién hecho.

مقادير الحمص بالطحينة:
2 علبة حمص مسلوق ( وزن العلبة 425 غرام )
2 فصوص ثوم مهروسين
1/2 كوب (120 مل) عصير الليمون الحامض الطازج
1/2 كوب (120 مل) طحينة
1/3 كوب (80 مل) ماء
1 ملعقة صغيرة ملح
للحمة:
3 ملاعق طعام سمنة او زيت
3 ملاعق طعام (30 غرام) صنوبر
200 غرام (7 اونصة) لحمة مفرومة خشنة
رشة ملح وفلفل اسود وقرفة وجوزة الطيب
Hummus ingredients:
2 (15 oz, 425 g) cans garbanzo beans
2 cloves minced garlic
1/2 cup (120 ml) freshly squeezed lemon juice
1/2 cup (120 ml) tahini
1/3 cup (80 ml) water
1 tsp salt
For meat topping:
3 tbsp ghee or oil
3 tbsp (30 g) pine nuts
200 g (7 oz) chopped beef (top sirloin)
pinch of salt, cinnamon, black pepper and nutmeg

Ingredients:
- 500 gr Chickpeas, Soak overnight then rinse well with water
- 2 teaspoons salt
- 1 Liter water
- Cook for 30 Minutes in Pressure cooker
- After 30 minutes in pressure cooker take off the chickpeas and their water too
- 2 Garlic Cloves
- 1 Cup Lemon Juice
- ¼ Cup of Olive Oil
- ½ Cup Tahini
- 1 teaspoon Cumin

Too much tahini, too much garlic, too much lemon juice or blending paprika directly into the hummus can impart bitter flavor. Also, when you blend tahini with olive oil, the oil can react to the heat of the spinning blades and take on a bitter flavor. Stir in olive oil just before serving.
