How To make Hot Italian Sausages
2 1/2 teaspoons Coarse (kosher) salt
1/2 teaspoon Finely minced garlic
1/2 teaspoon Whole black peppercorns
1 3/4 pounds Pork,trimmed,lean
1"dice>>>>
2 teaspoons Crushed red pepper
Chilled 1 tablespoon Paprika
1/2 pound Fresh pork fat :
1/2"dice>>>>
1/2 teaspoon Thyme
Chilled 1 teaspoon Fennel seeds
Combine dry spices in spice mill or mortar and grind to coarse texture. Mix with garlic in small bowl. Mix meat, fat & spices together in bowl. In food processor (or grinder w/med.plate) process 1/2 of mixture at a time, being careful not to overprocess. Fat and meat should remain distinct, but tiny pcs. Knead all together untill well mixed. Cover and refrigerate for 12 to 24 hrs.
Stuff into casings using sausage stuffer or horn attached to grinder. Tie off into 5" links and hang in cool place to dry. Or, just refrigerate for 24 hrs, uncovered. Hold in refrig. for up to 3 days, or freeze for longer storage.

Here is how to make delicious Italian Sausages Sandwiches:

◦ Olive Oil
◦ Sub buns
◦ Bell Peppers (red and green)
◦ Onion
◦ Garlic
◦ Tomato sauce
◦ Parmigiano Reggiano Cheese
◦ Fresh Mozzarella Cheese
◦ Fresh Parsley (optional garnish)
1. Start by browning the Italian sausage in a pan with 1-2 tbsp of olive oil. Try to get color on all sides of the sausage but remove the links before they are fully cooked. Once cooked, remove the sausages, and slice the sausage into 1/2 thick medallions once cooled enough to handle.
2. While the sausage is browning, slice your Peppers and onions into thin strips and finely chop 5-6 garlic cloves.
3. In the pan with the olive oil, begin to salute your vegetables starting with the bell Peppers, and then the onions after a few minutes. You can throw the sausage back in when you add the onions. Once everything is sauteed and lightly browned, add in the chopped garlic and stir fry for a minute until fragrant.
4. Add your favorite tomato sauce to the pan until you're happy with the consistency for your sandwich filling. Stir and heat through before removing the pan from the heat.
5. Slice your sub-buns in half and drizzle with about 1 tsp of olive oil to help it crisp up in the oven. Spoon in your desired amount of filling and top with grated Parmigiano Reggiano Cheese and some torn chunks of fresh Mozzarella. Bake in the oven at 400°F until the cheese is fully melted (about 5 minutes).
6. Top with finely chopped Parsley as an optional garnish and wrap tightly in parchment paper before serving. Let the sandwich stay tightly wrapped before slicing for a minute or two to help it hold its shape.

ITALIAN SAUSAGE Recipe | Make Your Own
A couple of years ago we set out on a quest for the perfect breakfast sausage recipe - and we found it! See: Today we're going to continue that journey, as we branch out and try our hand at seasoning up some Italian Sausage. After the video was over, we added about 1 cup of ice water the batch, and mixed it by hand for a good 5 minutes. The texture really blended well and smoothed out, and should keep its shape much better - as opposed to just coming straight out of the grinder. We packaged into 1# portions and froze it in bulk form. We don't own a sausage stuffing machine yet - maybe someday we'll pick up one up for more adventures in meat making ♥

Ingredients:
4 large Italian sausages, chopped into bit size chunks
1 tablespoon Olive oil for cooking
1 medium green bell pepper, sliced
1 medium red bell pepper, sliced
1 medium onion, sliced
4 cloves chopped garlic
2 teaspoons Italian seasoning
1 teaspoon salt
1 teaspoon ground black pepper
1⁄2 teaspoon chili flakes
1 tablespoon tomato paste
1 medium can of diced tomatoes (I use olive and garlic, but use the tomatoes of your choice.)
