How To make Honey Macaroonies
1 1/2 c rolled oats
uncooked
1/2 c coconut :
flaked
1/2 c walnuts chopped
1/2 c unbleached flour
3/4 c brown sugar :
packed
1/2 c margarine softened
2 tbsps honey
36 candied cherries :
red or green
Preheat oven to 350. In a mixing bowl, combine oats, coconut, walnuts and flour.; set aside. In a saucepan, combine brown sugar, margarine, and honey. Bring mixture to a boil, stirring occasionally. Pour over oat mixture. Mix well. For each cookie, press one level tablespoon mixture into a prepared 1 3/4" muffin pan. Top each cookie with a candied cherry. Bake for 15 minutes or until lightly browned.

COCONUT MACAROONS RECIPE
(makes 12 cookies)
Ingredients:
2 egg whites
3 tbsp maple syrup, honey or agave
1/2 tsp vanilla extract
1/4 tsp salt
2 cups shredded or desiccated coconut (150g)
1/4 cup ground oats or oat flour (25g)
2 tbsp dark chocolate chips (25g), optional
NUTRITIONAL INFO (per cookie):
104 calories, fat 7.9g, carb 7.4g, protein 1.6g
Preparation:
In a bowl, add room temperature egg whites, your sweetener, vanilla extract and salt. Beat with a fork until slightly foamy.
Add the coconut and oats and mix it in, until the mixture is nice and sticky.
Using a cookie scoop, scoop out the mixture onto a lined baking tray. If it's falling apart, form the cookie shape with your fingers.
Bake at 325F (160C) for 20 minutes.
Let it cool completely in a tray (or at least 30 minutes), to firm up.
Drizzle with melted dark chocolate.

Earl Grey Tea Macarons with Honey Buttercream Filling
This was my first try at macarons and I was thrilled that they turned out so well!
They had feet!!!!
These were amazingly good and they will be made again.
2 egg whites, at room temperature
5 tbsp. granulated sugar
1/2 cup. ground almonds
1 cup confectioners (powdered) sugar
1 tsp Earl Grey tea leaves
Notes*
This made about 15 -2 diameter macarons, a nice small recipe.
Use whatever filling you like, anything goes, nutella, jam, ganache etc.
I should have added the dry ingredients in two portions instead of dumping it all in at once.
If you want to colour the macarons, add it to the dry ingredients after you mix the sugar and almonds together.
I had lots of buttercream left over, so I suggest making twice as many macarons or halving the buttercream recipe.
