COCONUT MACAROONS | easy, almost healthy, coconut cookies!
Coconut macaroons are bite sized treats (like a coconut cookie!) with a crispy coating and chewy interior. But when dipped in chocolate, they make for one indulgent dessert.
Classic coconut macaroons are little dollops that contain sweetened condensed milk (which is dairy and extra sugar). But we're ditching that today to keep these lighter, fluffier, and less sugary. They're also gluten-free and dairy-free!
This version is easy, almost healthy (*wink*) and utterly delicious. I think they're the best, and one of my personal favorite sweet treats. Hope you love them too!

***RECIPE, MAKES 10 LARGE MACARONS***
2 egg whites
1/2 cup (100g) granulated sugar
3/4 cup (70g) almond flour
3/4 cup (90g) powdered sugar
1/4 cup (30g) cocoa powder
salt
cream and chocolate for the ganache (very small quantities)
Beat the egg whites until fluffy, then beat in the granulated sugar until the mixture is glossy and you get floppy peaks. Put in the almond flour, powdered sugar, cocoa powder, and a few grains of salt. Fold the dry ingredients into the eggs until you get a mousse-like consistency.
Cover a sheet pan with parchment paper and spoon the batter on in about 20 dollops. Let them sit and dry for a half hour. Heat the oven to 350 F / 180 C and bake until the meringues start to crack, about 15 minutes. Cool completely before filling.
To make the ganache, combine as little as 2 tbsp of cream with an equal quantity of chocolate by volume. Microwave until just bubbling, let it sit for a minute, then stir until smooth. Cool the ganache down to get it to a spreadable consistency.
MELOMAKARONA (Greek honey spiced cookies)
Melomakarona are Greek honey spiced cookies usually baked for Christmas. They're made with oil and have no eggs, no milk, and no butter. They're covered in walnuts or chocolate!

“Melomakarona” is a Greek word which in a free translation you could say it means “honey macaroons”. However, according to some sources the name comes from the ancient Greek work “makaria” which was a piece of bread offered in certain ceremonies. When you add “meli” (the Greek word for honey) over “makaria”, then you get a melomakarono!
These Greek Christmas cookies are spiced with orange zest, cinnamon and ground cloves and once they’re baked, they get soaked in a honey-based syrup. Traditionally, they’re covered in crashed walnuts but today you can also find them covered in chocolate, so I decided to make them both ways to keep everyone happy.
