EASY Almond Flour Shortbread COOKIES | Only 3 ingredients | Refined sugar free

Ingredients
* 1 1/3 cup (120g) almond flour (‼️NOT PACKED‼️)
* 2 tablespoons (30 ml) maple syrup
* 2 tablespoons (30 ml) coconut oil, melted
* Pinch of salt
NOTE:
1. Please, use the Digital kitchen scale fo the best results!
2. Instead of maple syrup take 2 tbsp sugar/low-carb sugar and 1 tbsp water.
3. Instead of coconut oil take Ghee or yellow part of melted butter. Vegetable oil don't work in this recipe.
4. Don't let the dough chill too long. Coconut oil will solid at room temperature and the dough will be crumbly and will not come together.
5. Don't pack down almond flour!
Instructions
1. Preheat oven to 350F (175C). Line a baking sheet with parchment paper.
2. In a medium bowl, combine all of the ingredients, stirring to combine (be sure to break up any lumps in the flour and/or sugar).
3. Shape dough into about 16 balls. Space balls 2 inches apart on prepared baking sheet. Flatten halfway (e.g., with a fork, cookie stamp, the flat bottom of a measuring cup, or fingertips)
4. Bake in a preheated 350F oven for 12 to 15 minutes until the edges are golden brown and the centers no longer look wet. The cookies will still seem somewhat soft, but that is due to the high amount of fat (almond flour + coconut oil). They will become firm once completely cooled.
5. Remove from oven and cool on sheet for 10 minutes. Transfer to a wire cooling rack and cool completely.
Storage: The cookies are best stored in the refrigerator, in an airtight container, for up to 2 weeks (or the freezer for up to 6 months).

LEVANDULOVÉ SUŠENKY
- ingredience: 250 g špaldové mouky, 60 g třtinového cukru, špetka soli, 120 g másla, 1 vejce, 3 lžičky levandulových květů
- nejprve promícháme sypké ingredience: mouku, cukr a sůl
- přidáme zbytek ingrediencí a vypracujeme hladké těsto
- těsto rozválíme (tloušťka cca 3 mm) a vykrajujeme kulaté sušenky
- pečeme na pečícím papíru na 180 stupňů, 13-15 minut
BISCOTTI DI LAVANDA
- ingredienti: 250 g farina integrale, 60 g zucchero di canna, pizzico di sale, 120 g burro, 1 uovo, 3 cucchiaini di fiori di lavanda
- in un terrina lavorate prima farina, zucchero e sale, poi aggiungete il resto e mescolate fino a ottenere l'impasto omogeneo
- stendete l'impasto e ricavatene i biscotti rotondi aiutandovi con la forma adatta
- su una teglia metteteci sopra la carta di forno, infornate i biscotti per 13-15 minuti, 180 gradi

2¼ cups all-purpose flour, unbleached
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
⅔ cup sugar
3 pcs eggs, large
3 tbsp honey
1½ tsp vanilla extract
2 tbsp orange zest, minced
1 tbsp dried lavender blossoms (optional)

0:11 Preheat the oven to 350 degrees F and adjust the oven rack to the middle position.
0:14 Sift the flour, baking powder, baking soda, and salt together in a small bowl.
0:23 Whisk the sugar and eggs in a large bowl to a light lemon color. Stir in the remaining ingredients.
0:36 Pour the dry ingredients over the egg mixture, folding it until the dough is just combined.
0:40 Halve the dough and grease a baking sheet with oil and line with parchment paper.
0:44 Place the halved dough about 3 inches apart on the baking sheet and using floured hands, quickly stretch each portion of dough into a rough 13x2-inch log.
0:50 Pat each dough shape to smooth it and bake for about 35 minutes until the logs are golden and just beginning to crack on top, turning once halfway through baking.
0:56 Cool the logs for 10 minutes and lower the oven temperature to 325 degrees F.
1:02 Cut each log diagonally into ⅜-inch slices with a serrated knife. Lay the slices cut side up and about ½-inch apart on the cookie sheet and return them to the oven.
1:08 Bake for about 15 minutes until crisp and golden brown on both sides. Turn over each cookie halfway through baking.

Lavender Shortbread Cookies
Does anyone else enjoy lavender in their baked goods? ????♀️
I finally stumbled upon some culinary lavender at my local Sprouts. This buttery honey lavender shortbread cookie recipe is short and sweet. The hardest part is waiting for the dough to chill.
Yields: 16 cookies
1 cup butter, softened
1/2 cup sugar
3 tablespoons honey
2 cups flour
1/4 teaspoon of salt
1/2 a teaspoon or 1 teaspoon culinary lavender (based on your preference of how strong you want the lavender flavor to be)
In a large bowl, cream together the butter, sugar, and honey until light and fluffy.
Sift in the flour, salt, and lavender and mix until combined.
Place one sheet of plastic wrap or parchment on the counter. Using the wrap, shape the dough into a log that is approximately 1 1/4 inches in diameter. Shape the log into a square if desired.
Freeze thirty minutes or refrigerate 1 hour, or until firm.
Preheat the oven to 325 F. Remove the dough from the fridge or freezer and slice into 1/4 inch slices. Place 1 inch apart on a lightly greased or parchment lined baking sheet. Bake 12-14 minutes, or until light golden brown.
Let cookies cool completely before serving.
