The famous “Медовик” cake, aka the honey cake, is so popular all over the world. This sweet creation is made with very thin honey cake layers and filled with a creamy cottage cheese cream and tart raspberry filling! Every Baltic person knows what a special treat this cake is!
This delicious cake is enjoyed with tea after dinner in homes across Latvia and Russia! Since this cake is labour-intensive to make, it’s typically reserved for special occasions such as birthdays, or for the holidays around Christmas and New Years'.
The simple flavour of the cottage cheese and raspberry goes perfectly with the honey layers. The important part of this recipe is letting the cake sit in the fridge. Once you assemble the cake, let it set in the fridge for at least 24 hours. This will allow the layers to become soft and delicate. The cake isn’t very sweet, but it balances out really well.

Honey Beer Bread is a super simple quick bread. Just 5 ingredients! The beer flavor is very mild and the bread is dense, moist, and ready for a slather of butter and drizzle of honey.

HONEY LOAF CAKE
Moist Honey Loaf Cake
Drizzled with honey, rich in flavor and a hint of cinnamon spice. Super easy to make and perfect to have with a cup of tea during this time of the year.
Ingredients
1 1/4 cups Flour
1/2 cups Sugar
1/2 cups vegetable oil
2 Eggs
1/2 cups Honey
1/2 cups Tea
1 tsp Vanilla extract
1 tsp Baking powder
1/2 tsp Baking soda
1 tsp Cinnamon
1/4 tsp Nutmeg
Topping:
2 tsp Honey
Preheat the oven to 160c and bake for 40-45min. Make sure to let it cook for 10- 15min before removing it from the pan and drizzling the topping.

Honey Bun Cake

A yummy treat for your honey bun!
1 cup brown sugar
2 teaspoons cinnamon
1 box yellow cake mix
1 cup sour cream (or plain yogurt)
4 eggs
3/4 cup vegetable oil
Glaze
2 cups powdered sugar
5-6 tablespoons milk
1 teaspoon vanilla extract
Blend brown sugar and cinnamon in a small bowl and set aside. Stir together cake mix, sour cream, eggs and oil.
I just whisked it all together, lumps are fine. Spoon half of your batter into a greased or sprayed 9 x 13 pan (or something close) Spread to the edges. Sprinkle brown sugar mixture over top, it'll seem like a lot but use it all.
Spoon remaining batter over top, try to cover top evenly but don't try to spread it. Using a knife, swirl batter, just run the knife in a zig-zag pattern.
Bake in a preheated 350 degree oven for 40-45 minutes, until a toothpick comes out clean.
While cake is baking, mix up your glaze. Combine powdered sugar, milk and vanilla until smooth. Once cake is done, remove from oven and drizzle glaze over top.
Let set for five long minutes before cutting and serving.
