How To make Herbed Spinach Balls
Ingredients

oz
spinach (frozen - chopped)
2
cup
herb stuffing mix
3/4
cup
parmesan cheese, grated
1
teaspoon
garlic, finely minced
1
each
onion, medium, finely chopped
3
each
eggs, beaten
1/4
pound
butter, melted
Directions:
Preheat oven to 350 degrees F. Thaw spinach and remove excess liquid. Add remaining ingredients (stuffing mix, parmesan cheese, garlic, onion, eggs and butter) and mix well. Form the mixture into small balls and place on a baking sheet. Bake for 15 minutes at 350 degrees F.
Yield: Serves 12-20.
NOTES:
* These can be made up ahead of time and frozen. If frozen, increase cooking time by 10-15 minutes.
* This recipe makes about 80 appetizer-size balls, or about 40 larger balls to use as a vegetable dish at a meal.

You'll need softened butter, chopped spinach, diced onion, eggs and egg whites, herbed seasoned stuffing, Romano cheese, granulated garlic, salt, and cayenne.
INSTRUCTIONS
First, preheat your oven to 350 degrees.
Cook and drain the spinach, then squeeze it dry.
In a bowl, mix all ingredients together.
Form the mixture into small balls and place them on a wax paper-lined cookie sheet.
Refrigerate while the oven preheats.
When ready, bake on a parchment paper-lined cookie sheet for 30 minutes, turning halfway through.
