The base layer here (and the carb-y comfort) is thinly sliced red potatoes that get simmered with some onions in a bit of cream until they’re just fork tender. You want to be sure they cook through but don’t fall apart, so slice ’em thin. A mandolin is your friend here. They form a little bed in the baking dish, and that’s topped with some fresh rosemary and nutty gruyere cheese.
Pat the pork chops dry and give them a sprinkle with some salt and pepper, but there’s no need to sear them or prep them in any other way. Just nestle them down into that creamy bed of onions and potatoes and top them with more cheese and some Panko breadcrumbs.

As they bake together in the oven, the onion-infused cream bubbles up around the meat and keeps it moist and tender. The cheese browns, the breadcrumbs get irresistibly crispy, the potatoes come out tender and full of flavor… It’s like a casserole dream fulfilled.

INGREDIENTS
1/4 cup Panko bread crumbs
3 tablespoons olive oil, divided
3 large red potatoes, sliced 1/8-inch thick
1/2 yellow onion, thinly sliced
2 cups heavy cream
1 1/2 cups Gruyere or Swiss cheese, grated and divided
6 (3/4-inch thick) boneless pork chops
2 teaspoons fresh rosemary, finely chopped and divided
Kosher salt and freshly ground black pepper, to taste

PREPARATION
Preheat oven to 400°F and grease a 9x13-inch baking dish.
In a small bowl, stir together the Panko breadcrumbs and 1 tablespoon of the olive oil. Set aside.
In a large saucepan over medium-high heat, add the onions, potatoes, and cream. Season with salt and pepper and bring to a simmer. Continue simmering until potatoes are just fork tender, stirring occasionally. Reduce heat if needed to maintain simmer.
Remove from heat and transfer potatoes and onions to prepared baking dish. (A slotted spoon works well.) Sprinkle with 1 cup of the cheese and half of the rosemary.
Pour 1 cup of the cream from the saucepan over the potato mixture and discard the rest.
Pat pork chops dry with a paper towel and drizzle them with remaining olive oil. Season each side liberally with salt and pepper, as well as the remaining rosemary. Rub to coat chops evenly with oil and seasoning.
Arrange pork chops across the potato mixture, pressing them down lightly into potatoes. Sprinkle with remaining cheese, and then the Panko breadcrumbs.
Cover dish tightly with aluminum foil and bake for 15 minutes. Uncover and bake 15 minutes more. Enjoy!

Cheesy Potato Stuffed Pork Chops | Pit Boss Grills Recipe
These bossin’ cheese stuffed pork chops with potato are a whole meal rolled into one! Loaded with gooey cheddar cheese and hash browns, sour cream and more! A hearty and decadent meal, these chops are sure to be a hit at your next barbecue or tailgate!
This stuffing forgoes the usual breaded variety for a gluten-free option by using hash browns. If you have an air fryer handy, feel free to fry them up before adding them to the stuffing a little extra crunch when you bite into your pork chops!

Ingredients:
4 BONE-IN PORK CHOPS
1 PACKAGE FROZEN SHREDDED HASH BROWNS, THAWED
1 TBSP PARSLEY, MINCED FRESH
PULLED PORK SEASONING
1 CUP SHREDDED CHEDDAR CHEESE
¼ CUP SOUR CREAM

My family loves this recipe! It is easy and so delicious. Pork chops are browned, then baked over thinly sliced potatoes in a cheesy sauce. You can't beat the combination of pork and potato, so this dish is a must try.
Pork Chop and Cheesy Potato Casserole
Ingredients
6 to 8 boneless center cut pork chops
1/2 cup chopped onion
1 garlic clove minced
2 tbsp butter
1 cup shredded cheddar cheese
1 cup chicken broth
1/4 cup half and half
1 can of cream of chicken soup
1 tsp paprika
salt and pepper
3 to 4 medium size Idaho potatoes
Instructions
1. Season the pork chops with salt, pepper, and paprika on both sides. Melt 1 tablespoon butter in a large skillet and cook pork chops a couple of minutes on each side. Remove pork chops from skillet.
2. Melt the other tablespoon of butter in same skillet you browned the chops. Add chopped onion and minced garlic and cook until onions are translucent.
3. Add soup, broth, and half and half. Stirring until creamy.
4. Gradually add the cheese until melted and completely incorporated.
5. Slice potatoes thinly and arrange in a 9 x 13 baking dish.
6. Place pork chops on top of potatoes.
7. Pour cheese sauce all over the top, shaking and jiggling to make sure sauce gets down in the potatoes.
8. Bake in a 350 degree oven, covered for 30 minutes and uncovered for an additional 30 minutes, or until the potatoes are tender. It might take a bit longer than 1 hour total.

Cheesy Baked Pork Chops
Pork chops baked in the oven with a layer of cheese... kid level easy recipe that I'm making whenever I don't feel like experimenting in the kitchen.
My baked pork chops are smoothened with breadcrumbs and tuned up with a layer of sauteed onions and bacon, sour cream, tomato slices and good amount of cheese. Kid level easy to prepare and very tasty.
