How To Make Tomato Paste

Ingredients for tomato paste:
5 kg. plum tomatoes
4 tbsp rock salt
2-3 tbsp olive oil
a colander
preferable hand blender or food processor to puree the tomatoes or you can do it by hand to
WATCH HOW TO MAKE PEPPER PASTE:
Wash and take out the bad parts of the tomatoes if there is any.
Cut them in four. Separate them into two parts for easy handling and put it on a colander.
Sprinkle 2 tbsp rock salt on each and mix it with hand. Let it sit for about 5-6 hours. You will see a clear juice coming from the tomatoes and drain under the colander. This way it will reduce the cooking time to become a paste.
Transfer the tomatoes to a big wide pan and begin to cook on low heat. You can stir from time to time and continue to cook for about 15 minutes until they are soft.
Using a strong hand blender or food processor process tomatoes to make a puree. Now we have to strain the puree to get rid of all the seeds and the skin. Use a big colander like in the video and strain by helping with your palm or back of a measuring cup or such.
Cook the strained tomato puree on very low heat, stirring from time to time. It takes about 5-6 hours to become a paste. You can do this part the other day too if you don't have time or if its already a night :)
Add about 2 tbsp olive oil and taste the paste: it should be saltier than regular dishes since it will also help to keep the puree fresh.
Transfer your tomato paste to a clean, boiled, and dried jar and cover the top of the tomato paste with olive oil to seal it from the air so it doesn't form a mold. In total, I got about 900gr. tomato paste from 5 kg. tomatoes. Keep it in the refrigerator and after each use, cover the rest with olive oil...

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.

How to make homemade TOMATO PASTE I Easy way to make Tomato Paste from Fresh Tomatoes

* 20 Lbs fresh tomatoes
* 2 Lbs fresh beets
RECIPE:
Cleanse tomatoes in a vinegar and water bath. The water and vinegar bath is strong enough to destroy pathogens when you can taste and smell the vinegar. Allow the tomatoes to soak for approximately 10 minutes and proceed to removing the seeds and place the flesh of the tomatoes in a stock pot. Then strain the juice into the stock pot to minimize waste, leaving only seeds behind. You may plant the seeds.
Place the pot on medium heat with the lid on till it comes to a boil. Remove lid and allow to simmer gently for approximately 4 hours till a significant reduction is achieved (about 1/10th reduction of the initial amount.) Turn the heat off.
Add beets to the pot of reduced tomatoes and stir to combine. Then, blend to a smooth and thick texture, and pour the mixture into a pot.
Cook on low heat for 10 minutes, or till, a thick, paste texture is reached. Let the mixture cool completely, and portion into plastic wrap to store, ideally, in the freezer.
