Citrus- Raisin Cake Recipe

Ingredients
250g of Flour
⅔ cup of White Granulated Sugar
2 Eggs
⅔ cup of Vegetable Oil
½ cup of Raisins (dried mixed fruits without cherries)
1 cup of Citrus Mixed fruit Juice
1 tsp of baking powder
1 tsp of baking soda
1 tsp of mixed spices
1 tsp of ground nutmeg
½ tsp of cinnamon
½ tsp of salt
¼ cup of crushed almond seeds
¼ cup of dried coconut flakes
1 tbsp of dark treacle
1 tsp of Vanilla flavour
1 tsp of pineapple flavour
Procedure - Sift flour,baking powder , baking soda in a bowl ,then add the cinnamon, nutmeg,mixed spices, salt to it and stir - Divide the cup of juice into two, then Soak your raisins with one part and leave the other remaining part - Put Eggs, sugar ,dark treacle, vanilla and pineapple flavours in a mixing bowl and mix for 3 minutes with medium speed till they are well blended - Then pour in the vegetable oil...keep mixing for like 3 minutes - Afterwards Add the dry ingredients ( flour mixture.) gradually...then add the crushed almonds , pour in the soaked raisins, the coconut flakes - Then finally pour in the remaining juice into the batter and stir well
