Grilled Chicken and Pineapple Kabobs with Hawaiian Rice Recipe (gluten free)
Looking for something a little different and rather healthy to try for dinner? I think you will love these delicious grilled chicken and pineapple kabobs with Hawaiian rice that I created recently. Let me know if you give them a try.
Pineapple Chicken Kabobs with Hawaiian Rice
Chicken Kabobs:
4 boneless skinless chicken breast
1 pineapple, cut into bite size pieces (save about ½ cup for rice)
Marinade for chicken:
¼ cup pineapple juice
¼ cup soy sauce (If you are making this GF, be sure to use GF soy sauce)
2 Tablespoons olive oil
2 Tablespoons brown sugar
1/2 -1 teaspoon crushed red pepper flakes
1 teaspoon garlic powder
Salt and pepper
Mix all marinade ingredients. Pour over chicken. Marinate for at least 6 hours. Add chicken and pineapple to skewers. Grill until chicken is cooked through.
Hawaiian Rice:
1 ½ cups uncooked rice
¼ coconut oil
½ cup red pepper, diced
½ cup onion, diced
¼ cup pineapple, diced
3 cloves garlic, minced
¼ cup soy sauce
¼-1/2 cup pineapple juice, I start with a ¼ cup and then add more as it cooks down.
¼ shredded sweetened coconut (optional)
Cook rice. Meanwhile, heat coconut oil and saute red peppers and onions until tender. Add garlic and pineapple and saute for another minute. Add soy sauce and pineapple juice. Add rice and mix well. Add coconut, if desired.

Hawaiian Meatball Kabobs
A sweet and savory combo that's a fun alternative to burgers!

HAWAIIAN MEATBALL KABOBS
Servings: 6 kabobs (with 4 meatballs each)
Ingredients:
1 lb ground pork
½ c bread crumbs
1 egg, beaten
¼ c finely chopped pineapple
¾ c barbeque sauce, divided
¼ tsp black pepper
¼ tsp onion powder
Directions:
1. Soak 6 wooden skewers in water for at least 30 minutes.
2. Preheat oven to 400°F and line a baking sheet with parchment paper.
3. Combine ground pork, bread crumbs, egg, pineapple, ¼ c barbeque sauce, black pepper and onion powder in a large bowl.
4. Scoop and roll into balls, about 1” in diameter and carefully thread 4 meatballs onto each skewer.
5. Place the kabobs on the parchment lined baking sheet.
6. Bake for 10 minutes, then brush with the remaining barbeque sauce. Flip the kabobs and brush the other side, too.
7. Bake an additional 8-10 minutes, or until the center of the meatballs are at least 160°F.

Hawaiian Chicken Kabobs with a simple marinade! | The Recipe Rebel
These Hawaiian Chicken Kabobs are sweet and savory, loaded with tender chicken breast, pineapple chunks, bell peppers and an easy pineapple BBQ marinade! The perfect prep-ahead summer meal.

Ingredients
Marinade
1 cup barbecue sauce (I like to use one with sweetness)
1/4 cup pineapple juice
1 tablespoon soy sauce
1 tablespoon oil
1 teaspoon minced ginger
1 teaspoon minced garlic
1/2 teaspoon salt
1 pinch black pepper
Chicken Kabobs
4 boneless skinless chicken breasts (about 1-1.5lbs)
2 bell peppers cut into 1 pieces
1 pineapple cut into 1 pieces
Instructions
In a medium bowl, whisk together marinade: bbq sauce, pineapple juice, soy sauce, oil, ginger, garlic, salt and pepper.
Cut chicken breasts into 1 cubes (ensuring they are an even size will get you the best results).
Place chicken in a large Ziploc freezer bag or medium glass container with half of the marinade. Cover and marinate for at least 1 hour or up to 4 hours.
Cover remaining marinade and refrigerate until needed.
Preheat the grill to medium high heat, around 375-400 degrees.
If using wooden skewers, soak for 10 minutes before building kabobs.
Build kabobs, alternating between chicken, peppers, and pineapple chunks as desired. Discard remaining marinade from the chicken.
Grill for 4-5 minutes per side, until chicken reaches an internal temperature of 165 degrees F in the thickest part, basting twice during the cook time with remaining marinade.
Remove from grill and serve.
