Hashbrown Breakfast Casserole Recipe (perfect for the holidays)

HASHBROWN CASSEROLE RECIPE:
- 30 oz. bag frozen hashbrowns
- 0.5-1 lb. sausage, crumbled (breakfast sausage, vegan sausage, italian sausage, etc)
- 1/4 cup diced onion
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1/2 cup melted butter (1 stick)
- 2 cups shredded cheese (cheddar, colby, jack or mixed blend)
- 10.5 oz. can cream of chicken soup (don't skip it)
- 1-2 cups sour cream (i use 1 cup)
- 8 eggs, beaten
- salt and pepper to taste
- 1/2 tsp. italian seasoning
- 1/2 tsp. garlic powder
- 1/2 tsp. red pepper flakes (optional)
- 1-2 chopped green onions (optional)
1) Preheat oven to 350 degrees.
2) Set aside 1/2 cup cheese for the topping.
3) Cook sausage until brown and drain fat; set aside.
4) Combine all ingredients in a large bowl + season well.
5) Transfer gently to a rectangle baking dish (at least 9 x 13) and sprinkle with more seasoning if desired. Top with remaining 1/2 cup cheese and optional green onions.
6) Bake uncovered for 55-65 minutes.
7) Allow to cool at least 10 minutes, cut into squares, and enjoy!

Hash Brown Casserole
Hash Brown Casserole
30 ounce bag frozen, shredded hash brown potatoes, thawed, drained, and patted dry
1 stick butter
1 large onion, chopped fine
10.5 ounce can Cream of Chicken Soup
16 ounce sour cream
12 ounce block mild cheddar cheese, grated and divided
1 teaspoon black pepper
2 teaspoons salt
one sleeve Ritz crackers, crushed and mixed with 1 stick melted butter
Preheat oven to 350°.
Make sure the potatoes are well drained. In a large microwave safe bowl, cook the onions and butter on high for 1 to 2 minutes or until the butter is melted. Stir in soup, sour cream, most of the cheese, pepper, and salt. Fold in the potatoes.
Spoon into a 9 x 13” greased baking dish. Sprinkle with the remaining 1/2 cup of cheese. Top with crushed cracker crumbs/butter mixture. Bake 45 minutes or until bubbly.

Hashbrown Breakfast Casserole with Sausage | The Recipe Rebel

Ingredients
▢1 lb breakfast sausage pork or turkey casings removed
▢4 cups frozen hash browns cubed or shredded
▢½ red bell pepper diced
▢½ green bell pepper diced
▢½ onion finely diced
▢10 large eggs
▢1½ cups whole or evaporated milk you can also use part milk, part cream
▢1½ teaspoons salt
▢1 teaspoon dried parsley
▢½ teaspoon black pepper
▢3 cups shredded cheese
Instructions
Preheat the oven to 350 degrees and lightly grease a 9x13 casserole dish.
In a large skillet over medium-high heat, crumble and brown the sausage (you may need to add a bit of oil if using turkey sausage). Remove from the pan and set aside in a large bowl.
In the same pan, cook peppers and onion until softened, adding additional oil if needed.
Add hash browns, sausage, and vegetables to the prepared dish. Add 2 cups of the cheese and stir well.
Whisk together eggs, milk, salt, parsley, and pepper and pour over the mixture in the pan.
Sprinkle with remaining cheese, cover, and bake for 40-50 minutes, until the eggs are just set through the center. Uncover and broil to brown slightly if desired.
