Brunch-Worthy Homemade Ham and Quiche
If you're looking to impress family and friends at your next brunch, it's got to be quiche and it's got to be HOMEMADE!

Quiche can be an intimidating dish, but if you take it step-by-step, it's really not so difficult after all. This recipe includes a homemade pie crust topped with a flawlessly delicious ham and cheese quiche filling.
If you're nervous about making it for the first time, don't worry! This video is heavy-loaded with TONS of tips for rolling out pie crust, getting the most decadent, flavorful, and luxurious quiche filling possible, and even side dish serving suggestions to round out your meal perfectly!
It's very similar to the classic, Quiche Lorraine. You'll love it!
HAM AND CHEDDAR QUICHE RECIPE:
Ingredients
Pie Crust (see below if making your own pie crust)
Tbsp Olive Oil
Tbsp Unsalted Butter
½ lb Country Ham diced
¼ c Green Onions sliced
Tbsp Italian Flat Leafed Parsley minced
4 Eggs
½ c Half and Half
¼ c Crème Fraiche
Kosher Salt and Black Pepper
1 c Cheddar Cheese freshly grated
Instructions
Preheat oven to 400°F. Roll out pastry dough to reach 12” in diameter. Gently lay the dough in quiche or pie dish, fold over and crimp edges. Place dish in the freezer for at least 30 minutes. Remove from the freezer and cover with nonstick aluminum foil, and pour over pie weights or dried beans to cover. Blind bake for 20 minutes. Allow to cool. Makes 6-8 Servings
Lower oven temperature to 375°. Heat butter and olive oil in a sauté pan over medium-high heat. Add diced ham and cook until browned and caramelized in color, about 5-8 minutes. Add green onions and cook for another 1-2 minutes until barely softened. Remove from heat and stir in parsley to wilt.
Whisk together eggs, half and half and crème fraiche. Place fine-mesh sieve over mixing bowl, and whisk until all the custard has filtered through. Season with a pinch of salt and ½ tsp of black pepper. Evenly layer ham mixture over the partially baked pie shell and sprinkle over cheddar cheese. Pour custard over ingredients and bake at 375° for 25 minutes, or until quiche is puffed and cooked through.
FOR THE CRUST:
Ingredients
8 tablespoons cold unsalted butter, cut into tiny cubes
8 tablespoons cold shortening cut into tiny cubes
2 ¾ cups all-purpose flour
1 teaspoon fine sea salt
2 tablespoon granulated sugar (omit for savory dishes)
2/3 cup of ice-cold water
Instructions
Place butter and shortening cubes in the freezer temporarily to harden.
Add flour, granulated sugar (if using) and the salt to a large mixing bowl and whisk.
Add the butter and shortening cubes and use a pastry blender, a fork, or two knives to incorporate it into the dry mixture. Stop once the fats are worked in and resemble pea-sized clumps.
Drizzle the water across the dough and stir until evenly distributed. Continue to stir until the dough comes together. You may also use your hands to knead it all together gently, if necessary.
Form the dough into a ball and transfer it to a floured work surface. Cut the dough ball in half using a knife or a pastry cutter. Form into two flattened round disks, wrap in plastic wrap and place in the refrigerator until chilled through, at least 2 hours.

HOW TO MAKE A HAM AND CHEESE QUICHE
Today I'm going to show you how I make my Ham & Cheese Quiche. Grab your ingredients and cook along with me. RECIPE BELOW
▶︎ SHOP MY FAVORITE PRODUCTS:
Ingredients you'll need:
• 1 - 9 Inch Frozen Deep Dish Pie Shell (THAW BEFORE ADDING INGREDIENTS)
• 3/4 - Cup Chopped Ham
• 3/4 - Cup Shredded Cheese (I used Sharp Cheddar)
• 1/4 - Cup Finely Chopped Onion (If you do not like a lot of onion, you can lessen this to 1/8 cup)
• 4 - Eggs
• 1 - Cup Evaporated Milk
• 1/2 - Teaspoon Black Pepper
Instructions:
• Preheat oven to 325 degrees
• Add ham, cheese & onion to thawed pie shell (You can mix all of your ingredients in a mixing bowl if you wish)
• Add eggs and pepper to mixing bowl
• Whisk your eggs with a fork or small whisk until desired consistency
• Pour egg mixture over the ham, cheese and onions inside pie shell
• Mix thoroughly
• Place quiche on a cookie sheet
• Bake at 325 degrees approximately 50 - 60 minutes - depending on your oven
• Let quiche sit for about 40 - 60 minutes to allow quiche to set before slicing

Ham and Cheese Quiche
Here's a delicious ham and cheese quiche that uses Easter ham leftovers (or other fillers). This recipe is so basic that you can enjoy this egg custard with any kind of cheese and any combination of fillers. I use some of the following combinations:
Crisply Fried and Crumbled Bacon and Swiss
Canadian Bacon and Gruyere
Asparagus and a combination of Mild Cheddar and Gruyere
Chicken and Broccoli with Cheddar
I can't make a quiche without thinking about my little sister, Bobbie Arbogast, who was the queen of egg cookery when we were in 4-H. Bobbie' Quiche Bobbie won more awards than I have hairs on my head. It was delicious but, gosh, was our family ever sick to death of quiche that year as she practiced every night! Today, I am able to enjoy quiche again but none is as good as Bobbie's! Here's my attempt:
Tassie's Ham and Cheese Quiche
1 - 9 pie crust
2 c. cheese
1 c. diced ham
4 eggs
1 1/2 c. half and half
1/2 t. salt
1/4 t. pepper
1 t. dried shopped chives
Preheat the oven to 400 degrees.
Lightly spray a pie pan with nonstick spray and roll the crust to fit the pan. Place one cup of the cheese in the bottom of the pie crust. Top with the diced ham then the remaining cheese.
In a mixing bowl, break the eggs and lightly mix. Stir in the half and half, salt, pepper, and chives. Pour over the cheese and ham. Bake for 40 to 50 minutes or until a knife inserted in the center comes out clean.
Cool 15 minutes before serving. Best served at room temperature or just warm.
Serves 6.
Easy Ham and Cheese Quiche | Heath Riles BBQ
This recipe uses leftover ham, cheese, and a frozen pie crust for the ultimate easy meal. Quiche is a great hearty breakfast or brunch option, but you can also serve it for a simple dinner.

Ingredients:
4 eggs
1 tablespoon Heath Riles BBQ Garlic Butter Rub
1 cup half-and-half
1 ½ tablespoons Dijon mustard
1 ½ tablespoons all-purpose flour
1 package frozen pie crust
8 ounces leftover ham, diced
½ shallot, diced
1 cup shredded Cheddar cheese
1 tablespoon parsley, diced
Directions:
1. Stoke the Traeger Ironwood XL or your grill of choice with Royal Oak Charcoal Hardwood Pellets and fire it up to 375℉.
2. Crack the eggs in a mixing bowl and whisk until light and fluffy. Then, add Heath Riles BBQ Garlic Butter Rub, half-and-half, Dijon mustard, and flour. Mix the ingredients until homogeneous, then set to the side.
3. Remove the packaging from the frozen pie crust and poke small holes on the bottom and sides.
4. Sprinkle the diced ham, shallot, and cheese into the pie crust.
5. Add the parsley to the egg mixture, then gently pour it over the pie crust.
6. Set the Ham and Cheese Quiche on the Traeger Ironwood XL and let it cook until set. My quiche had a total cook time of 45 minutes. Let it cool, then gently slice. Enjoy!
