Broccoli and Goat Cheese Quiche
1 pie crust (1/2 recipe of pie crust)
2 cups broccoli
3/4 cup cream
1/2 cup milk
2 large eggs
Freshly grated nutmeg
2 ounces soft goat cheese
Preheat oven to 400 degrees. Roll dough thinly on light floured work surface. Line 9-inch tart pan with removable bottom with dough. Line crust with parchment paper and will with pie weights or dried beans. Blind bake 20 minutes. Remove parchment and pie weights.
While crust is baking, blanch broccoli in boiling salted water until tender crisp, about 4 minutes. Plunge into ice bath to stop cooking. Drain well and pat with paper towels.
In a medium bowl, whisk together cream, milk, eggs, nutmeg and a pinch of salt and pepper. Line crust with broccoli and goat cheese. Pour cream mixture over top, filling crust almost to top. Place on a rimmed baking sheet and bake in oven until top is lightly brown and filling is set, about 30 to 35 minutes. Remove and let cool on a wire rack. Slice quiche into wedges and serve.

INGREDIENTS
1 sheet (8 or 9 oz) frozen puff pastry, thawed (I used Trader Joe’s)
9 oz (250g) broccoli florets, cooked
4 large eggs
2 tablespoons sour cream
3 tablespoons Ricotta cheese
2 oz (50g) Feta cheese, crumbled (or blue cheese)
1 cup (100g) Mozzarella cheese, shredded (or Parmesan cheese)
1 pinch salt
½ teaspoon black pepper
1 teaspoon basil
PREPARATION
1. Preheat the oven to 350˚F (180°C).
2. lace a one thawed puff pastry sheet into a 8-inch (20cm) deep pie plate, pressing firmly against bottom and sidewall.
3. Place 1-2 cups water in the bottom of a small pot. Add the broccoli, cover, and bring to a boil. Cook the broccoli until crisp-tender, about 4 minutes. Transfer broccoli to a colander and drain.
4. In a medium bowl, whisk together the eggs, sour cream, Ricotta cheese, Feta cheese, salt, basil and pepper.
5. Shift the broccoli florets on the dough, smooth. Pour the filling evenly. Sprinkle with shredded Mozzarella cheese.
6. Bake the pie for about 35-40 minutes, or until golden on top and set in the center. Let cool slightly before serving. This is so good served warm or cold!

Mmm.. brunch! I had an extra pie crust in the freezer and decided to make a quiche out of it. This is a super easy recipe for a simple, but delicious breakfast. It only takes a few minutes to put together, but needs to bake and rest for about an hour so plan ahead!
For this recipe, you'll need:
-1 (9) pie crust (frozen, refrigerated, or home-baked)
-1.5 cups of shredded cheese (divided)
-1 cup of broccoli
-4 eggs
-1.5 cups of half-and-half

EASY BROCCOLI & CHEESE QUICHE

Savory Broccoli and Cheese Quiche that looks fancy enough to impress any guest but is easy enough to pull together even when you're short on time.
Ingredients:
Refrigerated Pie crust dough.
8 large eggs
½ c. milk. I like to use whole milk.
3/4 tsp pepper
1 tsp salt
1 tsp garlic powder
1 small sweet onion finely diced. Some testers used preferred sauteing the onions prior to adding to the quiche and using fresh garlic. Just be sure to cool before adding to the mixture.
1 cup broccoli florets. Try to make sure they are fairly uniform in size so they will cook similarly.
2 cups pepper jack cheese shredded
Instructions:
Preheat the oven temperature to 375.
Roll the pie dough into a 9-inch pie plate. Use pie weights or beans to keep the crust (line the crust with aluminum foil first) from puffing up while baking. Blind bake the crust for about 15-18 minutes or until dry.
Meanwhile, whisk together the eggs and milk.
In a medium skillet on medium-high heat, saute the onions in a bit of butter and oil. Remove from heat. NOTE: if you like your broccoli more on the soggy side, throw them in with the onions to start the cooking prior to hitting the oven.
Stir the spices into the egg mixture, followed by the veggies and cheese, and then the cooled onions.
Pour the egg mixture into the pie crust and immediately place it on the bottom rack of the oven.. Bake in a preheated oven for 30 minutes or until the center is set and the outer edges of the top is turning golden brown. If the crust looks like it is getting too dark, cover it with a pie shield or aluminum foil.
Let cool about 15 minutes before serving.
