Goat Cheese Quiche

Dust your working space with flour and grab your short crust pastry. Start levelling it, until thin.
Preheat the oven to 360°F/180°C.
Grab a round tart tin, around 12 inches (30 cm) in diameter. Place the pastry covering the bottom and the sides of the tart tin.
Pinch it with a fork and remove the excess pastry.
Line parchment paper over the pastry and add around 2 cups of red beans on top. That will ensure that the air is removed, and the pastry won’t swell. Bake it for 10 minutes. Don’t turn off the heat when it’s ready.
Pour the heavy cream in a large bowl. Add the egg yolks and whisk them with the heavy cream. Add most of the Cheddar, keeping around 1/6 for later. Season with salt, pepper, and whisk.
Take out the beans, and evenly spread the tomato sauce over the pastry. Pour the heavy cream, add the goat cheese and the remaining Cheddar.
Top with some chives.
Bake the quiche for the next 10 minutes!

Comets with Goat Cheese Quiche

Ingredients
2 cup Comets™️
¾ cup onion
1 tablespoon butter
1 ½ cup flour
1 cup butter
½ teaspoon salt
1 egg
½ cup heavy cream
5 eggs
½ teaspoon salt & pepper
1 cup goat cheese

Instructions
1. On a chopping board, cut Comets™ in half and set aside in a bowl.
2. In a skillet over medium heat, melt butter, add onion, and cook until translucent stirring constantly. Lower heat to low and let cook for 20 more minutes stirring occasionally until caramelized. Set aside.
3. In a bowl, add flour, salt, and butter, and mix using the flat beater until completely incorporated. Add egg and mix until a homogenous dough is formed. Cover with plastic wrap and set aside in the fridge for 10 minutes.
4. Preheat oven to 350 °F.
5. Flour a flat surface and using a rolling pin roll out dough to 0.1-inch thickness. Cut to the diameter of the pan and remove excess dough. Set aside.
6. Place dough in a tart pan making sure there are no air bubbles between the pan and the dough. Poke the bottom of the tart with a fork to prevent any air bubbles when baking. Cover with parchment paper and seeds. Bake for 15 minutes.
7. Remove parchment paper and seeds and bake for 15 more minutes. Remove from oven and let cool without unmolding.
8. In a bowl, add eggs, heavy cream, salt, and pepper, and mix until completely incorporated.
9. Once the quiche crust is cold, spread goat cheese, add Comets™️ all over the pan, and top with caramelized onions.
10. Pour egg mixture into the tart pan.
11. Bake for 35 to 40 minutes or until the mixture sets and the surface is golden brown. Remove from oven and let cool.
12.Garnish with basil leaves and serve.

INGREDIENTS:
2 Tablespoons butter, softened
1 pound frozen hash browns, thawed
12 large eggs
1 1/2 cups sour cream
4-5 oz soft garlic herb goat cheese, room temperature
4 scallions, sliced
1 teaspoon pepper, divided
3 1/2 teaspoons coarse salt, divided
1 teaspoon red chili flakes
1 Tablespoon fresh basil
4-5 ounce pancetta rendered, reserve fat
1/4 cup Parmesan cheese
PREPERATION:
Preheat Italia Artisan Pizza Oven or indoor oven to 375 degrees. Grease 10-inch cast iron skillet with butter. Squeeze excess moisture from hash browns. In a large bowl mix hash browns, 2 Tablespoons pancetta fat, 1 egg, 2 teaspoons coarse salt, 1/2 teaspoon pepper and red chili flakes. Pat hash brown mixture into the bottom and up the sides of 10-inch skillet. In a large bowl, whisk sour cream, goat cheese, 1 1/2 teaspoons coarse salt, 1/2 teaspoon pepper and basil until well combined; slowly whisk in remaining eggs 1-2 at a time, this will make it easier to stir. Add pancetta to egg mixture. Pour into crust, and sprinkle with scallions and Parmesan cheese. Bake until set, 45 to 50 minutes.
