How To make Goat Cheese Quiche
3/4 cup whipping cream
2 eggs
Salt Freshly ground black pepper 3/4 cup shredded Swiss cheese
3/4 cup shredded jalapeno jack cheese
1/2 cup shredded mozzarella cheese
1/4 cup soft goat cheese
1/4 cup cream cheese
1/8 teaspoon minced garlic
1 tablespoon chives
Pre-baked pastry for (9-inch) tart
1) Whisk together whipping cream, eggs and dash each salt and pepper.
2) Combine shredded Swiss, jalapeno, jack and mozzarella cheeses in small bowl. In another bowl, beat goat cheese, cream cheese, garlic, chives, 1/2 teaspoon salt and pepper to taste until smooth. 3) Scatter shredded cheeses over bottom of pastry. Spoon goat cheese mixture in small dollops over top. Slowly pour egg mixture over all. Place tart pan on baking sheet to make handling easier and catch any overflow. 4) Bake at 375 degrees until top is lightly browned, about 35 to 40 minutes. Set aside 10 minutes before cutting. Serve warm or at room temperature. NOTE: Can be made a day ahead and refrigerated. Let come to room temperature before reheating. Bake at 300 degrees until warm, not hot, about 15 minutes. Goat Cheese Quiche

Dust your working space with flour and grab your short crust pastry. Start levelling it, until thin.
Preheat the oven to 360°F/180°C.
Grab a round tart tin, around 12 inches (30 cm) in diameter. Place the pastry covering the bottom and the sides of the tart tin.
Pinch it with a fork and remove the excess pastry.
Line parchment paper over the pastry and add around 2 cups of red beans on top. That will ensure that the air is removed, and the pastry won’t swell. Bake it for 10 minutes. Don’t turn off the heat when it’s ready.
Pour the heavy cream in a large bowl. Add the egg yolks and whisk them with the heavy cream. Add most of the Cheddar, keeping around 1/6 for later. Season with salt, pepper, and whisk.
Take out the beans, and evenly spread the tomato sauce over the pastry. Pour the heavy cream, add the goat cheese and the remaining Cheddar.
Top with some chives.
Bake the quiche for the next 10 minutes!

Here is the recipe in detail:
For 6 persons
TOTAL TIME: 55 mins
Preparation: 15 mins
Cooking: 40 mins
Ingredients :
1 shortcrust pastry
3 eggs
25 cl fresh cream
15 pigeon heart tomatoes
1/2 log of goat cheese
Provence herbs
salt, ground pepper
Step 1: Preheat your oven to 180°C (th. 6). Wash the tomatoes and cut them in half lengthwise.
Cut the goat cheese log into small pieces.
Step 2: In a bowl, beat the eggs into an omelet. For in the fresh cream, tomatoes and Provencal herbs.
Salt, pepper, and mix well.
Step 3: Unroll the dough in a mold and prick the bottom with a fork.
Place the pieces of goat cheese in the bottom then cover with the mixture. Bake for 40 mins.
Step 4: Tip: You can also place slices of goat cheese log on top of the quiche so that the cheese browns.

Rustic Goat Cheese Quiche with Caramelized Onion
A rustic goat cheese quiche that makes a great meal anytime of day. It’s made with few basic ingredients. You can use ready made store puff pastry or make your favourite pie or short crust. When you blind bake it, make sure you make enough holes with a fork and weight it down as it will puff up. I use parchment paper with blind backing beads, you can use dry uncooked rice or anything similar. Serve the goat cheese quiche with a well dressed crisp salad.
