How To make Ham & Cheese Balls]
1/4 lb Finely ground ham
1/4 lb Cream cheese
2 t Worcestershire sauce
1 T Catsup
1/8 t Pepper
1 t Lemon juice
1/4 t Salt
Blend ingredients thoroughly and form into tiny balls. Roll in chopped chives. Serve speared on tooth picks. Makes about 30 balls.

Arancini Ham and Cheese are deliciously plump stuffed saffron rice balls filled with ham, provolone, mozzarella and deep fried. Arancini are originally from Sicily and my version is simple to make and coated with fresh breadcrumbs making them extra crispy and simply exquisite.

Ingredients:
- For Risotto
¼ onion (chopped into pieces)
4-5 tablespoons of extra virgin olive oil
A few pinches of table salt
Vegetable stock
Saffron Leaves
500gr Arborio Rice
100gr of Butter
Grated Parmesan or Pecorino Cheese
- For Arancini Balls Filling and Coating
Fresh Mozzarella cut into cubes
Provolone cut into cubes
Fresh breadcrumbs in a wide plate
Small bowl of water for your hands
4 eggs
Vegetable oil (enough for frying)
Method:
Prepararing the Rice:
1. Put the pot on the stove at a medium heat and add 3 tablespoons of extra virgin olive oil.
2. Add the chopped onion and stir it into the oil. Leave it to become golden brown for 2-3 minutes and add the arborio rice.
3. Toast the rice for a few minute then add vegetable stock until you cover the rice.
4. Make sure you keep an eye on the rice and keep adding the stock when needed as you don't want the rice to get dry.The rice should cook for around 15 minutes (always read cooking time on the packet).
5. When the risotto is ready add the butter, the grated parmesan and stir very very well until butter melts.
6. Spread out the risotto on a wooden board or tray and let it cool down faster. You cannot make the arancini ham and cheese until the rice is cold.
Making the Arancini Ham and Cheese:
1. Cut the mozzarella , provolone and ham into small cubes.
2. Crack two eggs into a bowl and beat them well.
3. Prepare the breadcrumbs by putting them into a bowl and put some water into another bowl leaving them side by side.
4. Damp your hands in water and pick up a portion of the rice, flattening it slightly into your palm.
5. Add a spoonful of ham, provolone and mozzarella in the middle and then more rice on top.

Cheesy Country Ham Grit Balls

Ingredients
Canola oil, for frying
1/2 cup diced country ham
2 1/2 cups leftover cooked grits
1 cup grated smoked Gruyere cheese
1/2 cup all-purpose flour
1/2 teaspoon paprika
1/8 teaspoon cayenne pepper
3 large eggs, lightly beaten
1 cup panko breadcrumbs
Kosher salt
Directions
Fill a large Dutch oven two-thirds full with oil and heat over medium-high heat to 360 degrees F.
Add 2 tablespoons oil to a large heavy-bottomed skillet over medium-high heat. Add the ham and cook just until browned, 4 to 5 minutes. Remove with a slotted spoon to a large bowl. Add the grits and cheese to the bowl and stir until combined. Using wet hands, scoop 1/4 cup of the grit mixture, roll it into a ball and place on a platter or large plate. Repeat until all the grit mixture is used.
Whisk together the flour, paprika and cayenne in a shallow bowl. In a separate shallow bowl, add the eggs. Add the panko to another separate shallow bowl. Dip each grit ball into the flour mixture and shake to remove any excess before dipping into the eggs and then into the panko, spinning to coat completely.
Add the grit balls to the Dutch oven in batches, frying until brown on all sides, about 5 minutes. Remove to a sheet pan lined with a wire rack and immediately sprinkle with salt.

Today I am making some of my Thanksgiving appetizers
Cheese Ball
2 cup shredded cheddar cheese
1 8oz block cream cheese room temp
2 jalapenos chopped
2 Tbls chopped fresh parsley
1 2.5 oz of bacon pieces
1 Tbls garlic
1 tsp lemon juice
a dash of Worcestershire Sauce
1/3 cup of toasted pecans
