Northgate Virtual Cooking Class - Salvadorian Pastelitos with Northgate Masa (Jun. 17)
Salvadorian Pastelitos with Northgate Masa and Agua de Jamaica Margarita
Salvadoran pastelitos are similar to empanadas or dumplings. The masa is filled with ground beef and vegetables and fried.
Utensils or Equipment needed for the Class:
Grill
Grill Brush
Charcoal
Tongs
Container to place cooked items, and keep them warm
Bowl
Foil
Copper Mugs, optional
Salvadoran Pastelitos
Ingredients:
Northgate masa, plain, 4 cups
Paprika or achiote paste, 2 tablespoons
Ground beef, ½ lb
1 potato, peeled and diced
2 carrots, peeled and diced
1 cup green beans, chopped
½ onion, peeled and diced
Grape seed oil, enough to fry your pastelitos.
Directions:
Warm your pan to medium heat.
Once the pan is warm, add in the ground beef.
Season beef with salt and pepper to taste.
Cook the ground beef until browned.
Once the beef is brown, add the vegetables.
Cook until the vegetables are soft.
Turn off the flame. Remove the ground beef mixture from the pan and place into a dish to cool. This will be the filling.
As the filling cools, prepare the masa.
Add paprika or achiote paste to mass to give it a beautiful, vibrant color.
Get a golf ball size amount of masa. Flatten the masa in your hands.
Add about two tablespoons of filling to the masa.
Fold over on one side (like a taco).
Gently pinch the edges to close.
Fry evenly on both sides until golden.
Place on paper towels to drain excess oil.
Enjoy with a side salad!
Agua de Jamaica Margarita
Ingredients:
½ cup dried hibiscus flowers, rinsed
2 oz tequila
1 cup sugar
1 cup water
1 oz lime juice
Mint leaf, for garnish
Lime wedge, for garnish
Ice
Directions:
Add one cup of water to a saucepan, on medium heat.
Once the water boils, dissolve one cup of sugar.
Once the sugar is dissolved, you have simple syrup for your margarita. Set aside and allow to cool.
Rinse and drain your hibiscus flowers.
Add the dried hibiscus flowers to your tequila, to infuse the tequila with flavor and color.
In a cocktail shaker, add ice, 1 oz simple syrup, 2 oz hibiscus-infused tequila, and 1 oz lime juice.
Shake!
Rim a glass with margarita salt.
Pour cocktail into prepared glass.
Add a lime wedge and mint leaf for garnish.
Cheers!
