How To make Grilled Lamb Burgers
1/4 cup bulgur wheat
1 pound ground lamb
1/2 cup snipped parsley
2 Tablespoons finely chopped onion
1 Tablespoon dry red wine
1 clove garlic
minced
1/8 teaspoon dried mint :
crushed
1/4 teaspoon ground allspice
1/2 teaspoon salt
pita bread lettuce leaves chopped cucumber plain yogurt
Soak bulgar wheat in warm water for 1 hour; drain well. Combine bulgar with ground lamb, parsley, onion, red wine, garlic, mint, allspice and salt. Shape into patties andgrill over medium coals for 16-18 minutes or until done. Serve with pita bread, lettuce, cucumber and yogurt.

Ingredients
- Lamb patty (recipe below)
- 1 tbsp minted greek yogurt
- Small handful rocket
- Pickled red onions
- 1/3 Lebanese cucumber, cut thin and salted
- 1 burger bun
Method
1. Toast the bun, then spread yoghurt on both sides.
2. Next and your rocket followed by the patty, top with cucumber and pickled onion.
Lamb patties (recipe for 3 small or 2 large)
- 500g Lamb mince
- 1 tbsp ground cumin
- 1 tbsp dried oregano
- 1 tsp salt
- 6 grinds of the pepper mill
Method
1. Mix everything (not too much).
2. Shape into burgers.
3. Oil the outside and grill over a hot grill.
Ingredients pickled red onion
- 1 red onion, sliced lengthways thin
- 200ml water
- 200ml apple cider vinegar
- 1 tbsp sugar
- 1 tbsp salt
- 1 cinnamon stick
- 2 star anise
Method
1. Place everything apart from the onion into a pot and bring it to a boil.
2. Pour over the sliced onions and as soon as it's cold it's good to go.
3. These will keep in the fridge longer than they will last (well at least at my house).

400 g Lamb Shoulder
1 tsp Salt
1 tsp Cumin
1 tsp Cilantro
Dried Apricots (approx. 80g)
Creamy Feta Cheese
Honey
Black Pepper / Salt
Black Olives
Lettuce
2 Burger Buns
Greek Yogurt
Fresh Mint (halve a bunch)
1 clove of Garlic
Vinegar

Preparation:
Mix all the spices and crush in a mortar. Season the cubed lamb shoulder, roughly chop the dried apricots and add them to lamb. Mix well and grind the ME.AT. Form two Burger patties and chill them for 1 hour.
In the meantime, mix together the Yogurt, finely diced garlic and mint together with a dash of vinegar and salt.
Preheat your grill, sear the Burgers from each side over direct heat for 2 minutes and move them to indirect heat. Close the lid of your grill and cook them for 8-10 minutes at 180°C / 356°F.
Add some of the mint yogurt on a toasted Bun, add some lettuce and the lamb patty, garnish with some Feta cheese, honey, black pepper and olives and enjoy.
