Crazy Delicious Asian Inspired Lamb Chops for Picnic with a Chickpea Salad & Summer Drink
Do Lamb Chops for picnics sound a little unusual? In this video I am sharing a crazy delicious Asian Inspired Lamb Chops recipe and some tips to wrap lamb chops so that you can enjoy them without your knife & fork. This lamb chops recipe borrows inspiration from amazing asian condiments such as soy sauce and cardamom. As simple as it sounds, the cooked asian-inspired lamb chops will be the juiciest lamb chops you have ever had! To complete the picnic menu I am also sharing a quick and simple chickpea and tuna salad recipe and a super rehydrating drink prepared with cucumber, ginger, lemon and mint leaves.
Asian Inspired Lamb Chops To marinate the lamb chops pound ginger, garlic, peppercorns and cardamom seeds. Transfer on top of the lamb chops and add soy sauce, sugar, salt, chilli flakes, lime juice, olive oil and salt. Mix well and let the lamb chops marinate overnight in the chiller. To cook the asian inspired lamb chops, bring them to room temperature. To cook the lamb chops add Olive Oil oil into a heavy bottom skillet. Once the oil heats up add the lamb chops. Let the lamb chops cook medium rare, as demonstrated in the video. Let the lamb chops slightly cool on a plate and allow juices to flow before wrapping the boney ends of the lamb chops with aluminium foil to make them picnic ready.
To make the salad mix chickpea & canned tuna flakes in a mixing bowl. To make the dressing, using a small bowl add dijon mustard, extra virgin olive oil, ground pepper and maple syrup. Add shallots for a bit of crunch; it's optional. Mix dressing well with chickpea and tuna. Garnish with cilantro. This is a refreshing salad to go with the asian-insipred lamb chops.
To make the rehydrating summer drink. Slice cucumber, ginger, lemon and throw into a carafe or water jar. Juice ½ a lemon and add mint leaves. Finally add water letting the fresh ingredients immerse in the water. Keep the bottle refrigerated and enjoy the drink. This is also a great detox drink and can be refilled upto four times if refrigerated.

How To Make Lamb With Pickled Walnuts And Orzo Pasta: Rosie's Brixton Kitchen
This recipe is a great way to use up any left over lamb you may have from a BBQ or Sunday roast. Food writer Rosie Birkett shares her great recipe, cooking the lamb in a pickled walnut sauce and serving it with tasty orzo pasta.

Ingredients:
500 g leftover lamb, with excess fat cut off
2 tbsp redcurrant jelly
3 tbsp pickled walnut juice from a jar
6 pickled walnuts
300 g orzo
3 tbsp grated parmesan
salt
pepper
handful of freshly chopped parsley
Step 1: Prepare The Lamb
Preheat your oven to 150°c/300°f. Cut your lamb into medium chunks and place it into the bottom of a casserole dish. Season with salt and pepper.
Step 2: Make The Sauce
Put a couple of tablespoons of redcurrant jelly into a saucepan and heat until it melts. Once the jelly has begun to melt, add the pickled walnut juice. Chop your pickled walnuts into quarters and stir them into the sauce, being careful not to break them up. Pour the sauce over the lamb. If it looks a bit thick, add some warm water. Put a lid on the casserole dish and place it in the oven for 30 minutes, until the meat has become rich and dark.
Step 3: Cook The Pasta
Bring a pan of salted water to a rolling boil and add your orzo pasta. Cookaccording to the instructions on the packet. Once cooked, drain your pasta and return it to the pan.
Step 4: Serve
Mix through the parmesan cheese so it melts into the pasta. Mix through some pepper and a dash of extra virgin olive oil and some freshly chopped parsley. Remove your lamb from the oven and divide it between your serving plates. Spoon some of the pasta onto each of the plates and serve.
