How To make Grilled Chili Rubbed Lamb Chops
*For the lamb* 3 tablespoons medium-hot pure chili powder
1 tablespoon ground cumin
2 teaspoons dried thyme
crumbled
2 teaspoons sugar
1 1/2 teaspoons salt
3/4 teaspoon ground allspice
1 teaspoon freshly ground black pepper
16 rib lamb chops :
each about 1 1/2
inches thick 2 cups hot pepper jelly
*For the hot pepper jelly* 1 pound red bell peppers
1/2 pound green bell peppers
6 1/2 cups sugar
1 1/2 cups cider vinegar
2 teaspoons dried hot red pepper flakes
9 ounces liquid pectin
For the lamb: In a small bowl, stir together the chili powder, cumin, thyme, sugar, salt, allspice, and black pepper. Sprinkle the spice mixture over the chops, rub it evenly all over the meat, and chill the chops, covered, for at least 4 hours or overnight. Prepare a grill with glowing coals or preheat the broiler. On the oiled rack of the grill or on a broiler pan in the broiler, grill or broil the chops 4 inches from the heat for 5 to 7 minutes on each side for medium-rare meat. Serve the chops with the pepper jelly.
For the pepper jelly: Cut the bell peppers into 1-inch pieces and in a food processor chop them very fine. Transfer the chopped peppers to a deep kettle, add the sugar, vinegar, and red pepper flakes, and bring the mixture to a boil, stirring until the sugar is dissolved. Stir in the pectin and boil the mixture over moderately high heat, stirring, until it reaches the jelly stage (222F on a candy thermometer). Transfer the jelly to sterilized Mason-type jars (see sterilizing instructions on the pectin package), filling the jars to within 1/4 inch of the tops, wipe the rims with a dampened towel, and seal the jars. The jelly keeps, sealed, in a cool dark place indefinitely. Makes about 7 cups.
Notes: This recipe is not very spicy hot at all. We use it on regular toast for breakfast as well with for the grilled lamb chops. If you want it spicy, I would recommend doubling the amount of red pepper flakes. It also makes a huge batch--could easily be halved.

6 cloves garlic, whole
4 TBSP avocado oil, divided
2 tsp Worcestershire sauce
1 tsp garlic paste
1 tsp Italian herb paste
1 tsp garlic and herb seasoning
1 tsp all purpose seasoning (salt, pepper, garlic and onion powder)
Juice of one lemon
1 sprig thyme
1 sprig rosemary

ingredients
* 500g of Lamb chops
* Salt and pepper as per video
* 1 tbsp of ginger, garlic and chilli paste
* 3 tbsp tomato paste
* 2 tbsp of Sriracha sauce
* 1 tbsp of soy sauce (low salt preferably)
* 1/2 tsp of crushed chillies
* 1 tbsp of honey
* Splash of lemon juice
Method
1) Add lamb chops to a bowl
2) Add salt and pepper as per video
3) Add ginger, garlic and chilli paste
4) Mix everything thoroughly as per video
5) Refrigerate for 2 hrs
6) Oil a skillet pan with a small amount of oil
7) Add chops and cook on medium heat for roughly 5 minutes
8) Place the lid on an for 15 mins and allow to cook on medium heat
9) After this time flip the chop over and cook other side for the same 15 mins
10) Occasionally check on the chops, make sure they aren’t sticking to the pan, and add water if required to prevent this
11) Prepare the sauce as per the video using ingredients mentioned above (use alternative chilli sauce if you prefer)
12) Return to your chops and check if they are cooked and dry out any excess water using a high flame. You will need to continually stir the chop around to prevent them from burning
13) Once all the water has gone add your sauce and mix in
14) Preheat the grill and cook your chops in the oven for ~5 mins
15) Remove from grill and stir a little to capture all the remaining sauce
16) Ready to serve - should taste tender and succulent

• 6 lamb chops, flat to 2 cm thick

• 2 tsp chili powder
• 2 tbsp ginger & garlic paste
• 50ml vegetable oil

• 2 tsp tomato purée
• Pinch of crushed black pepper
• 2 tsp chili powder
• 1 tsp garam masala
• 1 tsp turmeric
• Salt

• 1 lime, cut into wedges

1. Put the lamb and all the first marinade ingredients in a bowl and mix well. Chill for at least 2 hours
2. Blend all the second marinade ingredients together. Remove the lamb from the first marinade and put it in a clean bowl
3. Add the second marinade and rub it into the lamb, then chill for a further 4 hours, or overnight
4. Pre heat the oven 200⁰C
5. Grease and line the baking tray with butter paper, arrange the lamb chop with a gap of 2 cm. Bake for 40 mins turn after 15 mins
6. Hold the lamb racks in hot oven for 15 min
7. Serve hot with green chutney and lemon wedges
