How To make Herb Crusted Lamb Chops
4 Loin lamb chops; 1" thick
1 tb Whole cumin seeds
3 Garlic cloves; minced
1 tb Lemon rind; grated
1 tb Lemon juice
2 tb Orange juice
1/4 c Chopped lemon basil or
1/3 c Chopped green basil
2 tb Olive oil
GARNISH:
1 Lemon; sliced
4 Fresh basil sprigs
Trim and remove excess fat and lightly salt lamb chops. Toast cumin seeds in a dry skillet over medium heat, shaking the pan frequently, just until they become golden and fragrant. Grind them in a spice mill or crush with a mortar and pestle. In a shallow Pyrex dish or pie plate, combine cumin with garlic, lemon rind and juice, orange juice, and basil and oil, mixing well. Add the lamb chops, pressing the herb and spice mixture onto both sides of the meat. Marinate at room temperature for several hours or overnight in the refrigerator. Barbecue chops over charcoal, basting occasionally with marinade. Serve garnished with fresh lemon slices and green basil sprigs. From 1994 "Shepherd's Garden Seeds Catalog." Pg. 59. Pepper to taste
3 tbsp Dijon Mustard for brushing
Garlic Parsley Breadcrumbs:
A handful of fresh parsley
2 cloves of garlic
1 cup Parmesan cheese grated
2 slices of toast cut into quarters

The lightly seasoned lamb is coupled with a cilantro-based herb crusting, creating a delicate blend of flavor and texture. The lamb is served with an exquisite finishing touch - a beautiful sweet potato puree smear and artful plating.
You will need:
Whole rack of lamb
1 tbsp salt & pepper
1 bunch thyme
3 tbsp olive oil
3 tbsp mustard
½ cup Panko bread crumbs
Parsley, mint, cilantro and thyme (few sprigs)
1 package Birdsboro beef fry
1½ lb tomatillos
½ cup white onion (chopped)
2 cloves garlic
½ cup cilantro
1 tbsp lime juice
2 jalapeños
4 medium sweet potatoes (peeled & cubed)
2 cup Soy milk
2 tsp salt
2 tsp pepper
1 tsp cinnamon
Chives (garnish)
Directions:
Preheat oven to 375°F.
Heat oil in a cast iron skillet on high. Season lamb with salt & pepper and place in the hot skillet, sear sides until crispy. Remove from skillet and place onto a baking sheet. Cook beef in fry oil and then set aside.
In separate bowl combine bread crumbs, thyme, parsley, mint and cilantro. Paint with mustard and cover in crumb mixture. Bake in oven for 5-6 minutes.
Heat oil in a pan, add tomatillos and
sear until brown on both sides. Blend tomatillos, lime juice, onion, garlic, cilantro and jalapeños. Add salt to taste and let cool in the fridge.
Boil sweet potatoes in soy milk until tender. Season with salt, pepper and cinnamon and blend until smooth.
Top with beef fry and serve.
