How To make Grilled Chicken Quesadillas
1 Whole chicken breast,
-boneless & skinless 2 tb Vegetable oil
1/4 ts Salt
Chili powder (4 pinches) 1/4 ts Cumin
1/4 ts Black pepper
1 Clove of Garlic, minced
1 Problano Chili
8 6-inch Flour Tortillas
2 c Grated cheddar cheese (mild
- or sharp) 1 c Grated chihuahua cheese or
- Montery Jack cheese 1 c Salsa or guacamole -optional
Preparation time: 20 minutes Cooking time: 10 minutes [Note: the serving size (24) is the number of "peices you will get -- not necessarily how many people it will feed.] 1. Heat grill or broiler and cook chicken until done (approx. 5 minutes on
each side). Cool to reoom temperature and shred inot 1/4-inch peices. 2. Over gas burner or under broiler, place poblano pepper and char skin until black all over, rotate as necessary. Place pepper in a bag and close. After about 15 minutes remove pepper from bag and remove charred skin, seeds, and stem. Cut pepper into 1/2-inch strips. 3. Place 4 tortillas on table and top each with 3/4 cup of cheese, a pinch of chili powder, 1/2 cup of shredded chicken and divided poblano strips. Top with remaining tortillas. 4. Heat an 8-inch or larger skillet
dry, no oil :
over medium high heat. Place quesadilla, one at a time in skillet and cook until golden brown (about 1 minute) Turn over and cook another minute. 5. Let cool slightly before cutting into 6 whedges. Serve with salsa or guacamole if desired. [Another Note: Now that I have typed this into the database, I see that nowhere in this recipe does it tell you when to add the spices other than the chili powder (which was not listed in the "ingredients," originally :
I had to go back and insert that) or what to do with the vegetable oil. I assume one might mix the spices in the cooking oil and smear it over the chicken breast before grilling or broiling. EPIC Chicken and Cheese Quesadillas on the Griddle - 2 Ways - Worth the extra effort?
Let's make some chicken and cheese quesadillas on the griddle, but let's do it 2 different ways to see if it's really worth putting in a little extra work for maximum flavor!
For the first griddle chicken quesadilla, we're just using regular boneless skinless chicken breasts, seasoned with taco and Mexican seasoning, and cooked on the griddle.
For the other chicken cheese quesadillas, we smoked a half a chicken on a bed of stewed Mexican tomatoes, poblano peppers, and onions. Then, we shredded the chicken and chopped up some of the stewed vegetables for the griddle quesadillas.
Look out for the few other tips that I show you to add extra flavor - like cooking the seasoned chicken skin on the griddle to get it crispy and add it to the quesadillas on the flat top grill. Enjoy!

JALAPEÑO CHICKEN QUESADILLAS | THE GOLDEN BALANCE
Jalapeño Chicken Quesadillas ????
THESE ARE SO GOOD I PROMISE.
Spice mix:
1 tsp chili powder
1 tsp paprika
1 tsp salt
1 tsp sugar
1 tsp onion powder
1 tsp garlic powder
1 tsp cayenne pepper
1/2 tsp cumin
Apply seasoning accordingly. I didn’t use all of it (used about half)
2 lbs chicken things
4 large flour tortillas
4 cloves garlic
1/4 cup jalapeño pickle juice
Juice of 1 lemon
A couple hour marinate is worth it!
EASY GUAC:
2 avocados
1 Roma tomato
1 jalapeño
1/4 cup cilantro
1/2 red onion (diced)
2-3 cloves garlic
Juice of a lime
Salt to taste
Jalapeño sauce is to die for:
1/2 cup mayo
1/2 cup sour cream
1/4 cup diced jalapeños
1-2 Tbsp jalapeño juice ( just trust me)
Pinch of fajita seasoning you made earlier ;)
Spread the sauce all over the chicken. It sort of coats it and makes it so creamy and flavorful. Don’t be a wimp when you apply it.
1/2 cup mozzarella
1/2 cup sharp cheddar
Apply cheese with your heart, don’t be a b**ch
1 Tbsp of butter for each quesadilla. Use Kerry gold or local Amish butter if you can!
Medium heat for the toasting so you don’t burn the bread!
