Kamado Joe Whisky Glazed Chicken Wings
Here's a whisky glazed chicken wing recipe for your next game day party that will be a crowd pleaser when served with Chef Eric Gephart's Honey Sriracha sauce!
Honey Sriracha Sauce:
1 cup sriracha hot sauce 1/4 cup white wine vinegar 1 T soy sauce 1 T lime juice 3 cloves minced garlic 1/4 cup honey 1/4 tsp fish sauce 8 T butter
Combine and bring to slow simmer over medium heat. Remove from heat, add butter and stir to melt and let cool.
Whisky Glaze:
1 cup whisky 1/2 cup maple syrup 1/4 cup brown sugar 1 pinch cayenne pepper
Heat to a simmer and reduce to about 3/4 cup. Let cool completely.
Preheat your Kamado Joe to 200-250°F and set up for indirect cooking with a light wood smoke. Put your wings on the grill and season lightly with salt and pepper (and garlic if you wish.) Smoke the wings for an hour.
Remove the wings and toss them in half of the whisky sauce. Cook them over direct heat until they are almost charred to your satisfaction. Remove them from the grill and toss in the remaining half of the sauce. Return them to the grill for another 3 to 5 minutes to finish.
Serve with the Honey Sriracha as a dipping sauce!
