HATCH CHILE: 2021 Harvest in Hatch, New Mexico/Chile Capital of the World/Red or Green/Ristra Making
If you've been following @marcyinspired1442, you know that many of my recipes include Hatch chile. That's because I'm a native New Mexican and chile is a staple in our diets. Depending on where you live, you may have seen the label, Hatch chile. Hatch is a tiny farming community in southern New Mexico, about 40 miles northwest of Las Cruces, that is known for having the most flavorful chile. In fact, it's called the Chile Capital of the World. Tens of thousands of people make an annual journey to Hatch during the months of August and September because that's peak harvest season. That's when they load up on enough Hatch chile to get them through the year. You can buy it in 40 pound sacks and have it roasted and even peeled on the spot. After that, you just freeze it and use it throughout the year in all your favorite dishes. In this video I take you along as I get my fix.

If you want to plan a trip to Hatch, try going over Labor Day weekend. They host an annual Chile Festival that is a lot of fun. And be sure to stop in at Sparky's and enjoy a green chile cheeseburger while there.

How to Make Beef Green Chili
This spicy dish is hotter than two rats fighting in a sock! Fresh green chili peppers, beef and spices. A treat for all.
Ingredients
• 2 Lbs Beef Roast
• 7 Long Green Chili Peppers
• 1 Poblano Chili Pepper
• ½ Cup Cilantro
• 1 Cup Chopped Onions
• 2 Roma Tomatoes
• 2 Tblsp Flour
• 2 Cloves Garlic
• ¾ Cup Water
• Salt & Pepper to Taste

INGREDIENTS:
* 8 poblano chilis (available at most Mexican produce stores)
* 1 Tbsp Garlic powder
* 10 thumb size Ginger peeled, or 1 cup blended ginger paste
* 4 bundles Scallions
* 4 large large Onion
* 8 Green long chilis (AKA Barker’s peppers)
* 20 Habanero chilis (more or less per preferred heat level desired)
* 3 Anaheim peppers
* 2 bundles fresh kale (strip leaves, add pinch of salt & pepper, drizzle with olive oil, and bake for 5 minutes at 400 degrees Fahrenheit till chips are formed)
* Salt to taste
* 6 tbsp herb and spice blend (substitute with 1/2 cup any fresh/fragrant herb of your preference, such as basil, parsley or cilantro) link recipe ????????
* 3 tbsp all purpose seasoning (substitute with 3 bouillon cubes-chicken or shrimp)
* 1 liter avocado oil
* 1 cup cold pressed coconut oil

How To Peel Green Chile
This is an instructional video on how to prep, peel, and store a sack of New Mexico Green Chile. I love the smell in the air of the Southwest during the months of August and September. This is when the annual Green Chile crop is harvested and transported to the grocery stores for distribution.
In true acknowledgement for my love of the whole Green Chile topic, I've decided to provide an instructional of my experience of the whole peeling process with a 40 pound sack of freshly roasted Hatch Green Chile. ???? Red barrio chili recipe-
Ingredients
1 tbsp olive oil
2 tbsp butter
2 pounds of ground beef
1 1/2 tsp ground cumin
1 medium onion, chopped
1 jalapeño, chopped (removed veins and seeds for less spice)
2 green onions
4 garlic cloves
3- 4oz can of hatch green chili (mild)
4 Tbsp chicken bouillon (adjust to taste)
1/2 tsp ground cinnamon
1 Tbsp onion powder
1 Tbsp garlic powder
Optional- 1 tbsp hatch chili powder
1/4 tsp ground clove
1 tsp black pepper
1 tbsp of sugar
1 tsp salt
1 tbsp Mexican oregano or marjoram
2 tbsp white vinegar
1 tbsp soy sauce
5 cups of water (for thicker chili use 3 1/2 cups)
2 tbsp instant corn masa (maseca) + 2 tbsp water
Optional for extra spice
Topping Oaxaca (melty cheese), white onion, cilantro, chiltepines (for spice), lime, and corn tortillas or corn chips
- My boys love when I add corn kernels to this chili.

Freeze for an easy meal, make sure to allow chili to cool before storing in the freezer
