How To make Green Bean Nest with Scallop Eggs
VINAIGRETTE:
3/4 c Olive oil
1/4 c Sherry vinegar
Fresh tarragon Fresh savory Salt, pepper SALAD:
2 1/2 lb Sm tender green beans *
1/2 c Unsalted butter
1 1/2 lb Bay scallops
1/3 c Mayonnaise
2/3 c Sour cream
1 ts Lemon juice, or to taste
1 tb Chopped green onions **
*Note: Green beans should be trimmed. **Use green tops of onions only. To make vinaigrette, combine oil, vinegar, tarragon and savory and season to taste with salt and pepper. Shake well in covered jar. To make salad, cook beans in large pot of boiling salted water until just crisp-tender. Drain. Place beans in cold water to stop cooking, drain and refrigerate. Melt butter in skillet over medium heat. Saute scallops just until done, 1 to 2 minutes. Chill scallops. Just before serving, combine mayonnaise, sour cream, lemon juice and green onions. Toss scallops in mixture. Combine beans with vinaigrette. Arrange beans in form of nest on serving dish. Place scallops in center. Sprinkle with additional savory.

The Humble Egg & Minced Meat Done So Differently That You’ll Want To Cook Everyday 猪肉蒸鸡蛋以不同的方式

The humble recipe of eggs and minced meat that is done differently. Looks beautiful and delicious as well. Can opt for minced chicken as well. A favourite among kids.
Ingredients
250g minced pork tenderloin/ pork belly
2 chinese mushroom soaked n minced
2-3 tbsp minced carrot
2 -3 tbsp green onions
3 eggs
1 tsp cornflour
250ml water
Soya sauce for topping. Garnish with green onions.
Marinate minced meat with salt, mushroom granules, light soy sauce, sesame oil, shaoxing wine, cooking oil, cornflour n dark soy sauce for color
Transfer into bowl, steam for 15 mins. Beat eggs n add the water n cornflour. When meat is cooked. Place into middle of plate and pour in the egg mixture. Steam for 20 mins. Serve hot with rice. Happy cooking!
