Healthy plantain recipe. As you may know, I’m a big fan of plantain in any form, especially with fish shrimps and veggies. Plantains are such a versatile food that many recipes can be made using them. Many confuse plantain with banana mainly because they look similar but when it comes to versatility, I say plantains are the clear winner- Even better when prepared with fish, shrimps, egg, or spinach, they are cheap, and healthy! And the fact that they fruit all year round, plantain is considered a reliable all-season staple food.

Welcome back to my channel guys. In today’s video I will be showing you how I made this. Super delicious plantain lasagna.
INGREDIENTS:
Ripe Plantain (3-4)
Ground meat of choice
Smoked paprika
Salt
Black pepper
Poultry seasoning
Maggi seasoning or soy sauce
Olive oil
Tomato sauce
Chopped onion
Chopped garlic
Chopped bell peppers
Chopped thyme
Chopped scallion
Cheese
Oil for frying plantains
Ground Turkey cooking time was approximately 25-30 minutes on medium-low heat.

Gratin Au Banane Jeune
I experienced this dish for the first time at Hotel Bambou in Trois Islets Martinique on a recent visit (Aug 8, 2023). It was soooo good that I just had to try this. We tend to boil or fry our ripe plantains in the English-speaking Caribbean. The process for this dish is similar to making Christophine au Gratin. Instead, you substitute ripe plantains for Christophine. I gather you can extend this recipe to ripe breadfruit, green bananas or plantains.
Standard Ingredients ----
Ripe plantains
Chives
Onion
Garlic
Thyme
Black pepper
All Spice
Nutmeg
Flour
Salt
Milk/Cream
My additions -------
Cilantro
Barons Hot Sauce (Simply the best hot sauce in the world)
Ground ginger
Basil
Other Possibilities ------
Ground beef, pork, or chicken
Shredded saltfish
Coconut milk instead of regular milk

Full recipe for Baked vegetables with white sauce
Prep time: 10 mins
Cooking time: 20 mins
Serves: 4
Ingredients:
• Butter 3 tbsp
• Refined flour (maida) 3 tbsp
• Milk 200 ml
• Salt to taste
• Pepper powder a pinch
• Nutmeg powder a pinch
• Processed cheese 200 gm
• Olive oil 1 tbsp
• Carrot ½ cup (diced & blanched)
• Mushroom ½ cup (diced)
• Green peas ½ cup (blanched)
• Sweet corn ½ cup (blanched)
• French beans ½ cup (diced & blanched)
• Capsicum ½ cup (diced)
• Broccoli florets ½ cup (blanched)
• Salt to taste
• Black pepper a pinch
• Oregano 1 tsp
• Red Chilli flakes 1 tsp
Method:
• Heat butter in a pan on medium heat, add flour, stir and cook well ensuring the colour doesn’t changes a lot.
• Add the milk slowly and gradually and keep whisking to avoid lumps.
• Add salt & pepper, nutmeg powder and grate processed cheese, mix well and cook further for 2-3 minutes, make sure the sauce is silky smooth without any lumps.
• Set a wok on medium high heat, add olive oil add the veggies, salt & pepper, oregano and chilli flakes. Sauté for 2-3 minutes, add the freshly prepared white sauce, mix well and cook for 2-3 minutes.
• Pour the veggies with white sauce in a baking dish and grate some processed cheese over it.
• Preheat the oven for 10 mins and bake it at 180°C for 10-12 minutes.
• Serve hot with freshly toasted garlic bread.
For garlic bread
Ingredients:
• Melted butter ½ cup
• Garlic 4 tbsp (chopped)
• Fresh coriander 1 tbsp (chopped)
• Garlic bread 1 loaf
Method:
• Mix the melted butter with finely chopped garlic and fresh coriander leaves.
• Slice the garlic bread loaf diagonally and apply the freshly made garlic butter on the bread slice surface.
• Heat a grill pan or a normal pan on medium heat, toast the garlic bread on both the sides until crisp and golden brown.

A scrumptious cheesy dish perfect for a filling dinner.
VEGETABLE CHEESY BAKE
Ingredients
12-15 French beans, finely chopped
2 medium carrots, finely chopped
2 large potatoes cut into batons
green peas
8-10 fresh button mushrooms, chopped
3 teaspoons butter
1 large onion,
Salt to taste
Black pepper powder to taste
2 cups White Sauce
½ cup grated cheddar cheese
Method
1. Preheat the oven to 180°C/350°F/Gas Mark 4.
2. Heat 1 tbsp oil in a non-stick pan, add chopped garlic 1 tbsp, saute and add the 2 medium onion chopped and sauté on medium heat till translucent.
3. Add 1 medium potato, chopped. soaked, 1 carrot chopped. mix well.
4. Add 1 tbsp broccoli florets, green peas, French beans chopped the tomatoes and sauté for one minute. Add the French beans, carrots, potatoes, capsicums and mushrooms chopped and sauté for three to four minutes.
5. Add the salt, white pepper powder and mix well. Add 3 sprig of thyme. mix well.
6. Beat and add ½ cup cheese sauce. mix well. Add 2 tbsps corn kernels. mix well.
7. Add 1 cup cheese grated. Switch off heat.
8. Transfer the mixture into an oven-proof dish and sad breadcrumbs ½ cup, sprinkle ½ cup processed cheese on top. grate and add ¼ cup cheddar cheese.
9. Bake in the preheated oven for 10-12 minutes or till the cheese turns golden brown.
10. Serve hot with bread.
