Easy Greek style meat sauce
This is an easy to make unique sauce for pasta and to use as ingredient in lasagne or cannelloni dishes, including Greek favourites like moussaka and pasticcio. Click here to ensure you don't miss any of my new recipes
Cooking with ioannis episode 33. Ingredients: 3 large onions, 2 cloves of garlic, extra virgin olive oil, 1.5kg beef and lamb mince (ground) meat, glass of red wine, oregano, black pepper, mild paprika, salt, 70gr tomato concentrate, fresh mint.
Method: Chop the onions and garlic and shallow fry them in 2 soup spoons of olive oil for 5’. Add the meat and keep pressing till it completely breaks down. If you are having difficulty use a potato masher to press down (careful not to scratch your pan!). Once the meat is completely broken down, add 1 full glass of red wine. Add a teaspoon of salt, ½ teaspoon paprika, teaspoon of oregano, grind some pepper (to taste). Add the concentrate. Chop and add 2 soup spoons of fresh mint (needed if you are using lamb). Mix well and let simmer for 30’.

Meat sauce in Greece is referred to as Kima (kee-MAH), which is also the word for ground beef. It's thicker and more like chili in its consistency than a typical Italian Bolognese sauce.
There are so many variations of this sauce and every Greek cook puts their own personal spin on the traditional favorite. The beauty of the recipe is that it can be adapted to your own personal taste and it will quickly become a favorite in your family.

Greek cuisine is a Mediterranean cuisine. Contemporary Greek cookery makes wide use of olive oil, lemon juice, vegetables, and herbs, grains and bread, wine, fish, and various meats, including lamb, poultry, rabbit and pork. The most commonly seen grain is wheat, however barley is also used. Also important are olives, cheese, eggplant (aubergine), zucchini (courgette), and yogurt. Greek desserts are characterized by the dominant use of nuts and honey. Some dishes use filo pastry.
Mezés (μεζές) is a collective name for a variety of small dishes, typically served with wines or anise-flavored liqueurs as ouzo or homemade tsipouro. Orektika is the formal name for appetizers and is often used as a reference to eating a first course of a cuisine other than Greek cuisine. Dips are served with loaf bread or pita bread. In some regions, dried bread (paximadhi) is softened in water.

“Makaronia me Kima” (Greek spaghetti with meat sauce) is one of my favorite comfort foods. This incredibly popular recipe is the Greek version of spaghetti Bolognese, a rich ground beef and tomato sauce served over pasta.

You will need
Butter
Onion and garlic
Peeled plum tomatoes (canned San Marzano tomatoes) or grated fresh tomatoes
Salt, pepper, sugar, bay leaves, cinnamon stick, allspice berries and ground cloves
White wine plus vegetable stock (bouillon powder or a stock cube)
Ground beef
Olive oil
parsley, to serve

INGREDIENTS LIST
* 2 lbs. lean ground beef
* 2 onions
* 4 garlic cloves
* 1/4 cup Greek extra virgin olive oil
* 2 tsp. ground cinnamon
* 2 whole cloves
* 2 - 28oz cans crushed tomatoes
* 2 tbsp. tomato paste
* 2 - 900g spaghetti pkgs.
* Mizithra cheese or parmesan to taste
* Salt & pepper to taste
