How To make Greek Biscuits
5 oz Feta cheese, crumbled
2 tb Each chopped fresh dill and
-scallion (green onion) 6 Pimento-stuffed green
-olives, chopped 1 tb Lemon juice
10 oz Package ready-to-bake
-refrigerated buttermilk -flaky biscuits, (10 biscuits) * Preheat oven to 400F. In small serving bowl, combine all ingredients except biscuits; set aside. Spray ten 2-inch diameter muffin pan cups with nonstick cooking spray. Separate each biscuit into 2 thin layers of dough and arrange 1 layer in bottom of each sprayed cup, reserving remaining layers. Arrange 1/10 of cheese mixture over each biscuit in cup, then top each with remaining biscuit layer; press around edge of each biscuit to seal. Partially fill remaining cups with water (this will prevent pan from burning and/or warping). Bake until biscuits are golden brown, 8 to 10 minutes. Remove pan from oven and carefully drain off water. Remove biscuits to wire rack and let cool. Makes 5 servings * Keep biscuits refrigerated until ready to use. This recipe for kourabiedes, the Greek butter cookies with powdered sugar, is what you need for this Christmas. Melt in the mouth buttery cookies, crunchy from the almonds and with an amazing aroma from the rose water. They are very easy to make and can last for a few weeks at room temperature, if you can resist from eating them all in the first week. Enjoy!

To make
➡️ 2 sticks / 225gr butter at room temperature
➡️ 1 cup / 250ml vegetable oil
➡️ 1/2 cup / 70gr powdered sugar
➡️ 2 egg yolks
➡️ 1 teaspoon of rose water
➡️ 1 teaspoon of vanilla extract
➡️ 1/8 cup cognac or brandy
➡️ 1 1/2 teaspoon of baking powder
➡️ 4 cups / 600gr plain flour
➡️ 1 cup blanched almonds
To serve
➡️ 1 1/2 cups / 200gr powdered sugar

Κουραμπίεδες με Λάδι και Βούτυρο
Κάντε αυτή τη συνταγή για κουραμπιέδες με λάδι και βούτυρο για να πετύχετε τους πιο αφράτους και τραγανούς κουραμπιέδες που λιώνουν στο στόμα. Είναι πανεύκολοι, με υπέροχο άρωμα από το ροδόνερο, τραγανοί από τα αμύγδαλα και πραγματικά λιώνουν στο στόμα. Η συνταγή βγάζει 35-40 κουραμπιέδες που κρατάνε έως και 4 εβδομάδες σε θερμοκρασία δωματίου αν μπορέσετε να αντισταθείτε από το να τους φάτε φυσικά!

Για τους κουραμπιέδες
- 225γρ βούτυρο σε θερμοκρασία δωματίου
- 1 φλιτζάνι / 250ml λάδι φυτικό ή ελαφρύ ελαιόλαδο
- 1/2 φλιτζάνι / 70γραμ. ζάχαρη άχνη
- 2 κρόκοι αυγού
- 1 κ.γ. ροδόνερο + έξτρα για το τέλος
- 1 κ.γ. βανίλια
- 1/8 φλιτζανιού κονιάκ ή ούζο
- 1 1/2 κ.γ. μπέικιν πάουντερ
- 4 φλιτζάνια / 600γρ αλεύρι γ.ο.χ.
- 1 φλιτζάνι αμύγδαλα χωρίς φλούδα
Για σερβίρισμα
- 1 1/2 φλιτζάνι / 200γρ ζάχαρη άχνη
Amygdalota: Greek-Style Almond Meringue Cookies
Print the recipe:
Ingredients
4 egg whites
1 and 1/2 cups granulated sugar
¼ teaspoon salt
1 teaspoon pure almond extract
1 teaspoon orange blossom water or 2 teaspoons vanilla extract
4 cups almond meal (blanched almond flour)
Optional garnish:
7 ounces semis-sweet or dark chocolate, melted
1 cup blanched sliced almonds
Instructions
Preheat oven to 325 °F, 165 °C.
In a large mixing bowl whisk the egg whites on high speed until thick and stiff.
In a large mixing bowl combine the almond flour, salt, sugar, almond extract, and orange blossom water. Mix together until combined.
Fold the whipped egg whites into the almond flour mixture until a dough is formed.
Note:For a more dense, firm cookie, keep the dough very dense by adding up to 455 grams of almond flour to it. Dense cookie dough will not spread during baking. For a flatter cookie, allow the dough to be slightly looser.
Using a small ice cream scoop or 2 spoons, scoop walnut-sized pieces of dough onto baking trays lined with parchment paper.
Alternately, fill a piping bag that has been fitted with the star attachment with the batter. Do not fill more than halfway. Pipe swirls of these cookies onto baking trays that have been lined with parchment paper.
Sprinkle some sliced almonds over the top of each cookie.
Bake on the center rack of the oven for 15 minutes. The cookies will be pale and slightly golden around the edges.
If baking 2 trays together, make sure to rotate the baking sheets from top to bottom halfway through baking.
Allow the cookies to cool completely.
If decorating with chocolate, spread some melted chocolate on the bottom of each cookie place the cookies chocolate-side up on the baking tray until they set. You may also place them in the freezer or refrigerator for 15-20 minutes or until the chocolate hardens.

Ingredients
For the dough:
4 cups (580g) all-purpose flour
½ teaspoon baking soda
1 teaspoon baking powder
1/2 cup of extra virgin olive oil
1/2 cup light olive oil or vegetable oil
½ (100g) cup of sugar
½ cup (125ml) of orange juice
Zest of 2 oranges
For the syrup:
2 cups of sugar
2 cups of water
2 cups honey
For the garnish:
¾ cup ground walnuts
1 heaping teaspoon ground cinnamon
¼ teaspoon ground cloves
Instructions
Preheat oven to 350 °F, 180 °C.
Place the flour, salt, baking powder, baking soda, and orange zest into a bowl. Whisk together to combine.
Always zest citrus before juicing.
Combine the oil and sugar in another bowl and whisk together until the sugar has dissolved.
Combine the orange juice and the baking soda together. Mix it and add to the oil mixture.
Add the oil mixture to the flour mixture and mix together until a dough is formed.Be careful not to overmix so that the oil does not separate from the dough. If the dough seems a bit too dry and crumbly add 2-3 tablespoons of orange juice and knead together with a spatula or your hands.
Turn the dough out onto a work surface, compress it and form a circle. Roll out to ½ inch in thickness. Do not use any additional flour to do this.
Using a 2-inch round cookie cutter, cut out the cookies. Place them on baking sheets lined with parchment paper.
Use a fork to make marks on each cookie.
Bake for 30-35 minutes or until golden brown.
While the cookies are baking make the syrup. Combine the water and sugar in a saucepan and bring to a boil. Stir until the sugar dissolves. Remove from heat and add the honey. Stir until incorporated.
As soon as the cookies come out of the oven, put them all together in one of the trays and pour the hot syrup over them.
After 15 minutes, carefully flip each cookie over so that both sides absorb the syrup. Allow the cookies to absorb the syrup in the pan for at least 1 hour.
Combine the ground walnuts, cinnamon, and clove powder and mix well. Sprinkle this garnish over each cookie and serve!
Notes
Store the cookies in an airtight container at room temperature.
