How To make Grandma's Pumpkin Cheesecake

CRUST:
1 c Graham cracker crumbs
1 tb Sugar
4 tb Butter; or margarine, melted
FILLING:
16 oz Cream cheese; softened
3/4 c Sugar
16 oz Pumpkin; 1 can
1 1/4 ts Ground cinnamon
1/2 ts Ground ginger
1/2 ts Ground nutmeg
1/4 ts -salt
2 Eggs
TOPPING:
2 c Sour cream
2 tb Sugar
1 ts Vanilla extract
Pecan halves; 12 to 16 CRUST: Combine crust ingredients. Press into the bottom of a 9" spring form pan; chill. FILLING: Beat cream cheese and sugar in a large mixing bowl until well blended. Beat in pumpkin, spices and salt, add eggs one at a time, beating well after each. Pour into crust and bake at 350 degrees for 50 minutes. TOPPING: Meanwhile, for topping, combine sour cream, sugar and vanilla. Spread over filling; return to oven for 5 minutes. Cool on a rack and chill over night. GARNISH: each slice with a pecan half. This cake is a Thanksgiving favorite that my wife Grandma CC has been making for over 30 years. She usually does in a pie crust. I think its one of our favorite and I happy to share it with everyone.

Here is the recipe:
2 cups mashed cooked pumpkin or 2 small pumpkins for roasting
1 can evaporated milk
2 eggs - beaten
3/4 cup packed brown sugar
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp salt
double the spice for a darker pie with more flavor
-- if you're using canned pumpkin then skip this step. Take two small pumpkins and remove stem. Cut in half and clean out halves. Then kosher salt the flesh and put the halves flesh side down on a parchment paper lined cookie sheet. Bake at 400 for about 35-40 minutes or until paring knife inserts into skin with ease. ***Cool pumkins for 1 hour before carving out flesh***. Carve out flesh off of skin and puree.
-- combine all ingredients with pureed pumpkin, mix well with mixer
-- put in prepared crust. It will be soupy. Don't panic. It will set up in the baking process.
-- bake for 425F for 15 minutes
-- drop temperature to 350F and bake for 35-40 minutes
-- use the toothpick test by putting in the center of pie and pulling out a clean toothpick.
-- let pie cool. I let mine cool overnight to ensure best thickness.

1/2 teaspoon ground cinnamon
1/8 teaspoon fresh ground nutmeg
2 tablespoon all purpose flour
1 teaspoon vanilla extract
