How to Make EASY Pumpkin Layer Cheesecake
In this video we are going to show you a super easy dessert that only takes minutes to make. Today we are making Pumpkin Layer Cheesecake. This cheesecake makes eight servings. It starts off with a traditional cheesecake layer topped with a layer of pumpkin cheesecake all in graham cracker crust.
For this recipe you will need:
• Two eight-ounce packages of cream cheese – these need to be softened
• ½ cup of white sugar
• ½ tablespoon of vanilla extract
• Two eggs
• ½ cup of pumpkin puree
• ½ teaspoon of ground cinnamon
• A dash of ground cloves
• A dash of nutmeg
• One 9 inch ready to use graham cracker pie crust
• ½ cup of whipped topping
1.) Pre heat your oven to 350 degrees Fahrenheit or 176 degrees Celsius
2.) In a large bowl, combine cream cheese, sugar and vanilla. Mix until smooth. Add eggs and mix until blended.
3.) Remove 1 cup of the batter and place into a separate bowl. Add pumpkin, cinnamon, cloves and nutmeg and stir gently until well blended.
4.) Carefully spread the cream cheese batter into the ready to use crust.
5.) Now top with the pumpkin cream cheese batter.
6.) BAKE at 350 degrees Fahrenheit or 176 degrees Celsius for 35 to 40 minutes or until center is almost set.
7.) Once cool, refrigerate cheesecake a minimum of 3 hours or overnight before serving

Ingredients
Crust
2 3/4 cups (390 g) chocolate cookie crumbs
2 Tbsp (25 g) packed light brown sugar
1/2 tsp ground cinnamon
1/2 cup (115 g) unsalted butter, melted
Cheesecake Layer
1 pkg (8 oz/250 g) cream cheese, at room temperature
1⁄3 cup (70 g) granulated sugar
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1 large egg, at room temperature
1/2 cup (125 mL) pure pumpkin purée
Pumpkin Pie Layer
2 cups (500 mL) pure pumpkin purée
1/2 cup (100 g) packed light brown sugar
1/2 cup (100 g) granulated sugar
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
3 large eggs, at room temperature
1 cup (250 mL) whipping cream
Sweetened whipped cream, for décor (optional)
Directions
1. Preheat the oven to 350°F (180°C) and grease a 9-inch (23 cm) springform pan.
2. For the crust, stir the cookie crumbs with the brown sugar and cinnamon and then stir in the melted butter until evenly combined. Press into the bottom and all the way up the sides of the pan. Bake for 10 minutes (no change will be noticeable). Let cool on a wire rack while you make the filling. Leave the oven on.
3. For the cheesecake layer, beat the cream cheese until smooth (by hand is easy enough) and then beat in the sugar, cinnamon, cloves and nutmeg. Switch to a whisk and whisk in the egg, followed by the pumpkin purée.
4. Scrape the batter into the cooled crust and bake for 30 minutes, until the cheesecake no longer jiggles in the centre. While it bakes, prepare the pumpkin pie layer. Whisk the pumpkin purée with both sugars and then whisk in the cinnamon, cloves and nutmeg. Whisk in the eggs and then the 1 cup (250 mL) whipping cream. Once the cheesecake layer has baked for 30 minutes, remove the pan from the oven and gently pour the pumpkin pie filling over the cheesecake—it will fill the pan right to the top.
5. Return the pan to the oven and bake for 50 to 60 minutes more, until only the centre of the pie shows signs of jiggling. Let cool in the pan on a wire rack to room temperature, up to 4 hours. Chill the cooled pie, uncovered, in the fridge overnight to set the filling.
6. If you wish to decorate the pie, remove it from the pan and carefully slide it onto a cake stand or a platter. Scoop the whipped cream into a piping bag fitted with a plain or star tip and pipe a crown just around the top of the pie or simply dollop the whipped cream in the centre. Chill until ready to serve.

Hello my beautiful fam! Welcome back to my kitchen today I’m going to share with you how To make a very easy and delious pumpkin pie cheesecake, im going to be honest with you guys, cheesecakes are the easiest dessert to bake yet tiene su maña(has his ticks),everything has to be room temperature and you can not over beat the batter!!!!! I been practicing how to make the perfect pumpkin pie cheesecake for over a month now, I can’t tell you how many cheesecakes didn’t make it in the process, so many wasted ingredients and well you call it wasted time when you are learning! What can go wrong???
-Using cold cream cheese will cause batter to be lumpy or cheesecake to be dense
-Not scraping down mixed bowl will cause batter to be lumpy and cheesecake will have pockets of cream cheese
-over-beat batter will cause cheesecake to crack, if it does don’t worry just use whipped cream to cover ????
-over-baked cheesecake will cause the top to burn and crack
-Not fully chilling cheesecake before slicing will be difficult to slice

Check cheesecake after 45 minutes, every oven is different And cooking time will slightly vary depending on your location❗️❕❗️❕

Ingredients: 8 servings
7 graham crackers
4 tbsp melted butter
2 tbsp brown sugar
1/2 cup sugar
16 oz Philadelphia cream cheese at room temperature
2 eggs room temperature
1/4 cup heavy whipping cream at room temperature
1/4 cup sour cream at room temperature
1/2 cup 100% pure pumpkin
2 tsp vanilla extract
1 tbsp Pumpkin Pie spice (divided)
2 pinch of salt (divided)

No Bake Pumpkin Cheesecake
Cookie Crust
2 cups (200g) cookie crumbs* (gingersnap are great)
1/4 teaspoon each: ground ginger and ground cinnamon
6 Tablespoons (85g) unsalted butter, melted
1/4 cup (50g) granulated sugar or brown sugar (packed)
Cheesecake
two 8-ounce blocks (450g) full-fat cream cheese, softened to room temperature
1 cup (227g) pumpkin puree*
3/4 cup (90g) confectioners’ sugar
1/4 cup (50g) brown sugar
1 teaspoon pure vanilla extract
2 teaspoons pumpkin pie spice*
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1 container whipped topping
Optional Toppings
Whipped Cream or Topping and/or Salted Caramel Sauce
Crust Stir the gingersnap crust ingredients together. Pour into a 9-inch or 10-inch springform pan and pack in very tightly. Freeze for 10-20 minutes as you prepare the filling.
Filling Beat the cream cheese on medium speed until perfectly smooth and creamy. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Add the pumpkin, confectioners’ sugar, and brown sugar and beat on medium-high speed until combined. Scrape down the sides and up the bottom of the bowl as needed to help combine. Add the vanilla extract, pumpkin pie spice, cinnamon, and salt and beat until combined, creamy, and smooth. Make sure there are no large lumps of cream cheese. If there are lumps, keep beating until smooth.
Fold the whipped cream into the cheesecake filling until combined
Remove crust from the freezer and spread filling into crust. Use an offset spatula to smooth down the top.
Cover tightly with plastic wrap or aluminum foil and refrigerate for at least 8 hours and up to 2 days. For best results, at least 12 hours is best. I chill mine overnight. The longer refrigerated, the nicer the no-bake cheesecake will set up.
Use a knife to loosen the chilled cheesecake from the rim of the springform pan, then remove the rim. Using a clean sharp knife, cut into slices for serving. For neat slices, wipe the knife clean between each slice.
Serve cheesecake with optional toppings. Cover and store leftover cheesecake in the refrigerator for up to 5 days.
