How To make Goodness Cake
1 c Chopped dates
1 c Boiling water
1 1/2 c AM Multi Blend Flour
-OR- AM Whole Wheat Flour 1 ts Non-alum baking powder
3/4 ts Baking soda
1/4 ts Sea salt (optional)
1/4 c Vegetable oil
1/3 c Honey
1 ts Vanilla extract
2 Eggs
1 Ripe banana; mashed
1/4 c Chopped walnuts or pecans
-OR- 1/2 c -Sunflower seeds
Add chopped dates to boiling water and boil 5 minutes. Sift together in mixing bowl the Multi Blend Flour, baking powder, baking soda and salt. Set aside. In a second bowl, beat the eggs well. Mix in the honey, oil, vanilla extract and banana. Add dry mixture to the liquids and mix together. Add the dates and nuts (sunflower seeds), mixing lightly. Pour batter into an oiled 9" x 9" baking pan and bake 30 minutes in 350 F. oven. Test for doneness. Topping (optional): Heat together 1/4 cup honey, 1/4 cup butter, and 1/2 cup unsweetened coconut. The BEST Vanilla Cake Recipe: this delicious, moist and fluffy vanilla cake covered in a perfectly creamy vanilla buttercream is beyond easy to make and a total crowd pleaser! It's one of my most popular cake recipes and it's so easy to make!!
There's a FULL cake decorating tutorial at the end of this video showing you how to smooth that buttercream, clean the edge and add a flower crown!

SOME TIPS
*If you’re not using 6-inch pans, double the recipe for 8-inch pans or triple the recipe for 9-inch pans.
*Raspberry juice will give a beautiful soft pink color with no food coloring.
*If you see little clumps of butter after you mix the wet ingredients don’t panic, it all works out by the time you mix in the dry ingredients. *You can even use melted butter and warm the milk and sour cream up a bit if you like.
*You can substitute whole milk yogurt for the sour cream if desired, I do it all the time and can’t really tell the difference.
*To get FLAT layers that are moist inside and out try using cake strips! You can buy a set online, or make your own from foil and paper towels at home. I made a whole blog post on it so check it out if you’re interested!
*If you like a less sweet frosting try my Italian or Swiss meringue buttercream recipes! They’re Creamy, dreamy and oh so delicious.

RECIPE
Enough for 12 Cupcakes
250g / 1 Cup Butter (salted or unsalted)
375g 3 Cups Icing Sugar | Powdered Sugar | Confectioners Sugar
30ml / 2 Tablespoons Milk
Add room temperature butter to a bowl. Beat the butter for 5 minutes until it has become light and airy, doubled in size and lost most of it's colour. Start adding the icing sugar half a cup at a time, beating for about a minute in between each addition. Use the milk to thin out the consistency of the icing, add it a teaspoon at a time. This is also the time to add any flavourings or colourings that you would like. This icing can last in the fridge for a few weeks or the freezer for 3 months. When you are ready to use just let it get back up to room temperature.
