- 6 cups chicken or vegetable broth

- 1/2 cup coconut milk
- Salt and pepper to taste

Directions:
1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
2. Add the curry powder, cumin, coriander, turmeric, and cayenne pepper to the pot and stir to combine.
3. Add the broth, lentils, sweet potato, carrot, and red bell pepper to the pot and bring to a boil.
4. Reduce the heat to low and simmer for 20-25 minutes, or until the vegetables are tender and the lentils are cooked.
5. Puree the soup using an immersion blender or transfer it to a blender in batches and puree until smooth.
6. Stir in the coconut milk and season with salt and pepper to taste.
