Russian Golden Key Cake | The BEST Caramel Cake Recipe! With Mascarpone Whipped Cream Frosting

This elegant pecan and caramel cake, also known as Golden Key Cake, is one of the best caramel cake recipes out there! It’s irresistibly delicious, with moist caramel cake layer filled with sweetened condensed milk and pecans and frosted with a fluffy mascarpone caramel whipped cream frosting. This cake is what caramel dreams are made of! My husband isn’t the biggest fan of desserts, but he specifically requests this cake every year for his birthday. It’s that good!
The name Golden Key comes from the Russian candy bar that’s the inspiration behind this cake. Both the candy and the cake are hugely popular in Russia, Ukraine, and Eastern Europe! Find another version of this cake in my cake book, The European Cake Cookbook!
RECIPE:
For Caramel Cake Layers:
4 large eggs
¾ cup (228 g) dulce de leche
1 tsp vanilla extract
½ cup (100 g) white granulated sugar
1 cup (240 ml) buttermilk
¾ cup (180 ml) light cooking oil, such as canola
2 tsp (4 g) instant coffee
1 ½ tbsp (22 ml) hot water
2 cups (250 g) all-purpose flour
2 tsp (10 g) baking soda
2 tsp (8 g) baking powder
¼ tsp salt
For Filling:
¼ cup (76 g) dulce de leche
½ cup (120 ml) sweetened condensed milk
1 cup (125 g) finely diced pecans or hazelnuts
For Caramel Whipped Cream Frosting:
16 oz (454 g) mascarpone cheese, softened at room temp
1 cup (304 g) dulce de leche
½ cup (120 ml) sweetened condensed milk
1 tsp vanilla
1 tsp instant coffee
2 tsp (10 ml) hot water
3 cups (710 ml) heavy cream, chilled
1 cup (125 g) diced pecans or hazelnuts, for garnish

Yellow cake is hard to make because you can't hide anything. This cake took me 50 experiments to figure out; it has that spongy feathery texture and a buttery, floral vanilla flavor that is going to be the perfect base for lots of my cakes to come. 黄金糕本名叫蜂窝糕,发源于南洋,是南洋娘惹糕的一种,黄金糕是该糕流传至广东之后的别名。此糕的重要原材料就是南洋木薯,成品呈蜂窝状,所以叫蜂窝糕,又因为切片后呈鱼翅丝状,又叫鱼翅糕。
主要食材:椰浆80克,木薯淀粉100克,蛋黄3个,鸡蛋一个,白糖60克,温水20克,酵母粉2克。
Gold cake, originally called honeycomb cake, originated in Nanyang. It is a kind of Nanyang niangya cake. Gold cake is the alias of the cake after it spread to Guangdong. The important raw material of this cake is Nanyang cassava. The finished product is honeycomb, so it is called honeycomb cake. It is also called shark fin cake because it is filiform after slicing.
Main ingredients: 80g coconut milk, 100g cassava starch, 3 egg yolks, 1 egg, 60g white sugar, 20g warm water and 2G yeast powder.
Simple Yellow Cake Recipe
Simple yellow cake. Planning a party or event is stressful enough. I know it's so much easier just to purchase a cake made somewhere. Those cakes can be very delicious in their own right, but to me, nothing quite beats the homemade version. There is just something so rustic about it. The ingredients in this cake are probably already on hand. It's really easy (I don't call it simple for nothing!) to put together, and I love that this recipe will yield two 9 pans.
