How To make Glorious Golden Fruitcake
4 c Unbleached Flour; Sifted
1 1/2 ts Baking Powder
1/2 ts Salt
2 c Butter Or Regular Margarine
2 1/2 c Sugar
6 Eggs; Lg
1/4 c Milk
4 c Walnuts; Chopped
1 c Golden Raisins
1/2 c Candied Pineapple; Chopped
1/2 c Red Candied Cherries;Chopped
1/2 c Green Candied Cherries; Chop
1 tb Lemon Rind; Grated
Pineapple Glaze Pecan Halves Sift the flour, baking powder and salt together and reserve 1/4 c of the flour mixture. Cream together the butter and sugar until light and fluffy, using an electric mixer at medium speed. Add the eggs, one at a time, beating well after each addition. Add the dry ingredients alternately with the milk, beating well after each addition. Combine the walnuts, raisins, pineapple, candied cherries, lemon rind and the 1/4 cup of reserved flour mixture until all are very well coated. Stir into the batter. Spread the batter in a greased and wax-paper lined 10-inch tube pan. Bake in a 275 degree F. (That is correct, 275 degrees F.) oven for 2 hours and 45 minutes or until done. Cool in the pan for 30 minutes before removing to a wire rack to completely cool. Wrap the fruitcake tightly in foil. Store in the refrigerator up to 4 weeks. When ready to serve or to make a gift of it, prepare the Pineapple glaze, and frost the top of the cake, letting the glaze drip down the sides. Decorate with the pecan halves. Makes one 5 lb fruit cake. PINEAPPLE GLAZE: Combine 1 cup of sifted confectioners' sugar and 2 T of pineapple juice, mixing until smooth.

Recipe for this 6 inch round Christmas Cake:
225g of Currants
75g of Sultanas
75g of Raisins
40g of Glazed Cherries
40g of Mixed Peel
(steeped in 2 - 4 tbsp of Brandy)
110g of Plain Flour
110g of Butter
100g of Muscovado Sugar or Soft Dark Brown Sugar
2 eggs
1 and a half tablespoons of Black Treacle (Molasses is a great subtitute for Black Treacle)
1 tbsp (optional) of Golden Syrup
Pinch Nutmeg (optional)
half teaspoon of Mixed Spice
Bake for 3 hours in pre heated oven 140c / 275f - Gas Mark 1

NO BAKE FESTIVE FRUIT CAKE
4c mini marshmallows
8c graham cracker crumbs
2c seedless raisins
8oz pitted dates, finely chopped
1.5c diced mixed candied fruit
1.5c walnuts, coarsely chopped
1/2t cinnamon
1/2t nutmeg
1/4t cloves
6T orange juice
1c evaporated milk, undiluted
Line 2 - 9x5 loaf pans with waxed paper. Set aside.
In large bowl, combine all ingredients except orange juice and evaporated milk. Mix well, using hands if necessary. Add remaining ingredients and mix well until graham cracker crumbs are moistened.
Pack mixture evenly into loaf pans. Cover with foil and refrigerate at least 2 days before serving. Makes 2 - 2lb fruit cakes.

ORANGE ROLL
Ingredients:
8 Eggs
250g or 1 ¼ cup of Demerara Sugar
1 tablespoon of Corn starch
Juice and Zest of 2 Oranges
Castor Sugar to roll on a wet clean cloth
Preparation:
1. Mix the Sugar with the Corn starch
2. Crack the eggs and add the sugar (with the Corn Starch) and mix without beating
3. Add the juice and zest of the 2 Oranges
4. Pour the preparation into an oven pan lined with baking paper
5. Bake in the oven at 180°C OR 350°F for approximately 20 minutes
6. Once baked, place it in a wet towel sprinkled with sugar
7. Roll it with the help of a cloth and the first sprinkle with Castor Sugar
GOLDEN SWEET EGG THREADS
Ingredients:
12 Egg yolks
250g of Sugar
1 - 1 /2 cup Water
1 tablespoon Vanilla extract
Preparation:
1. Mix the sugar and the water on a pan and bring to a boil and reduce it to medium-low. Add the vanilla Extract
2. Separate the egg whites from the yolks and strain the yolks through to remove the clear thin yolk sac
3. Gently mix the yolks and put them in the three-point funnel (You can win one from me, watch the video to know how)
4. Drizzle the yolks into the sugar syrup in long threads, 5 inches/13 cm
5. Allow cooking for a minute
6. Remove the threads from the syrup with a FORK and placed them into a large sieve to drain.
7. Separate the threads with the fork. As per my taste and preference, I do not rinse the threads with cold water as I enjoy the bright sugary look and flavour

4 Cups all-purpose flour (512g)
1 3/4 Cups sugar(351g)
2 Cups Margarine (454g)
11/2 tsp Butterscotch extract

This recipe shows you how to make a delicious Nigerian wedding cake. Those light fruit cakes that people look forward to at weddings.
This Nigerian wedding cake recipe is always a hit.
The mixed fruits can be pre-soaked in Brandy up to three months in advance or they can be used dry.
The cake can be soaked in Brandy or Rum to preserve it as any alcohol added to cake batter before baking will not act as a preservative. It will leave the cake with a richer flavour though.
