How To make Glazed Smoked Ham
1 6 pound cooked ham -- semi-boneless
HONEY-MUSTARD GLAZE 1/4 cup grainy mustard
2 tablespoons honey
1 tablespoon bourbon
RED CURRANT & ORANGE GLAZE 1/2 cup currant jelly
2 tablespoons orange juice
1 1/2 teaspoons ground pepper
brOWN SUGAR AND CLOVE GLAZE whole cloves 4 tablespoons butter
3 tablespoons brown sugar
1 tablespoon fresh lemon juice
Let ham warm to room temperature for 30 minutes. Heat oven to 325. Place ham on rack in roasting pan and bake 1 hour; prepare glaze. Brush ham with glaze and continue to bake 30 minutes, basting every 15 minutes. Transfer ham to cutting board and let stand 15 minutes. Then carve and serve. HONEY-MUSTARD GLAZE Process all ingredients in blender until smooth. Brush glaze on ham and baste. RED CURRANT AND ORANGE GLAZE Blend all ingredients and brush on ham and glaze. brOWN SUGAR AND CLOVE GLAZE Score ham in diamond pattern. Stud with cloves and bake. Melt butter; add sugar and lemon juice and blend over low heat until smooth. Brush glaze on ham and baste. Source: Good Food, 4/88, pp 45-46.

Smoking a holiday ham might be the easiest thing there is to smoke!
There isn't any prep... there is any rubs or brine or injections. You just buy a ham from the grocery store (these are already fully cooked) and you basically just heat it up in a smoked environment instead of in the oven).
And then right at the end... you glaze it with real maple syrup and let that caramelize on the outside.
Now, you might think because it's so easy it might not be LIGHT YEARS better than cooking the same ham in the oven... but it is. You have to try smoking your Holiday Ham this year. Your family and friends will thank you.
And you can use any smoker or grill for smoking your ham - you just need to set it up for indirect cooking and hold the temps steady between 250-275 for 2 - 2.5 hours. The ham is ready to serve when it's heated to 140 internal. A quick 20 minute rest and it's ready to slice and serve!
I personally like the spiral cut hams because you get more flavor inside - and it makes it really easy to cut it off the bone and serve.

Hams are not just for the holidays! This is recipe is one of my favorite ways to “double smoke” a spiral ham. Most people only think of a serving a ham for the holidays but let me tell you this ham recipe can be served year round and folks will be asking you for more.
I start with a fully cooked spiral ham but you can use any smoked “city” ham: shank, butt, or whole hams will work. I like the spiral ham because it’s already portioned for you. The slices take on the seasoning and glaze and each piece taste delicious.
Since this ham is fully cooked you’re really just warming it up on the smoker and adding a glaze at the end. These hams are perfectly ok to eat out of the package or warmed in the oven but they are at their very best on the smoker.
I start by applying a light coat of Dijon mustard on the outside. This acts as a glue for the seasoning. For that I use my The BBQ Rub but not too heavy. I want a hint of bbq flavor without being overly seasoned.
The spiral ham goes on the pit for about 2.5 hours; I like to add a few chunks of cherry wood for smoke flavor this is where the “double smoke” comes into play.
Then it gets the glaze. I mix brown sugar, honey, and my vinegar bbq sauce and baste it over the top letting it drizzle down into all the nooks and cranny’s! This glaze is sweet but also has a nice acidic balance that goes great on ham. The glaze needs to cook on for about 30 minutes and you’re all done - It’s that easy. Since the ham is spiral slice cutting it up is a breeze, just use a knife to free it from the bone and arrange the slices on a serving platter. I’ll be the first to tell you it makes some “Killer” BBQ ham sandwiches!
BBQ Glazed Ham Ingredients:
- 8-10lb spiral ham
- 1/4 cup Dijon mustard
- 2 Tablespoons Killer Hogs The BBQ Rub
- 1/2 cup light brown sugar
- 1/2 cup Killer Hogs Vinegar sauce
- 1/4 cup honey
BBQ Glazed Ham Directions:
1. Prepare smoker for indirect cooking at 250-275°F using a few chunks of cherry wood for smoke flavor.
2. Remove spiral ham from packaging and coat the outside with the Dijon mustard. Apply a light coat of The BBQ Rub over the dijon.
3. Place the ham on the smoker and cook for 2 1/2 hours.
4. Heat the brown sugar, honey, and vinegar sauce until warm and drizzle over the ham. Use a basting brush to spread the glaze over the surface if necessary.
5. Continue to smoke the ham for 30 minutes until the glaze sets
6. Remove the ham from the smoker and serve
