How To make Gingerbread Waffles
2/3 c Molasses
1/3 c Butter; melted
2 Egg yolks
1 c Buttermilk
2 c All-purpose flour
1/2 ts Baking soda
2 ts Baking powder
2 ts Cinnamon
1 ts Ginger
1/2 ts Nutmeg
1/2 ts Salt
1/2 c Crystalized ginger; chopped
2 Egg whites; beaten stiff
Combine the molasses, butter and egg yolks and whisk with fork until smooth. Blend in the buttermilk. Sift together the flour, baking soda, baking powder, cinnamon, ginger, nutmeg and salt into a mixing bowl. Stir in the crystalized ginger. Make a well in the center of the dry mixture and add the molasses mixture, beating quickly until smooth. Fold in the egg whites. If the batter seems too thick, add a little more buttermilk. Bake in your waffle iron until a dark golden brown. Makes 4 big, thick waffles.

How to make Gingerbread Waffles
These gingerbread waffles are so easy and perfect for the holidays!
Recipe:
This recipe makes around 8 waffles
Ingredients:
2 Cups (240g) All Purpose Flour
2 Tbs (30g) Granulated Sugar
4 Tsp (16g) Baking Powder
1 ½ Tsp (5g) Ground Cinnamon
¾ Tsp (2g) Ground Nutmeg
½ Tsp (1g) Ground Cloves
1 Tsp (3g) Ground Ginger
½ Tsp (2g) Salt
1 ¾ Cup (420mL) Milk
½ Cup (120mL) Vegetable Oil
2 Tsp (8g) Vanilla Extract
1/3 Cup (80mL) Molasses
2 Large Room Temperature Eggs, Separated
Directions:
1. In a large bowl, combine all the dry ingredients. In a separate large measuring cup or bowl, combine the milk, oil, vanilla, molasses, and just the yolks from the eggs.
2. Add the wet ingredients to the dry, and whisk until combined. In a separate bowl, beat the egg whites until they reach stiff foamy peaks, and fold them into the batter.
3. Preheat your waffle maker, and ladle in the batter. Cook according to the manufacturer instructions, which should be around 2-3 minutes. Top with maple syrup and whipped cream if desired. (I like to sprinkle a little cinnamon on top of mine).

Sweet & Seasonal Gingerbread Waffles
Whether you’re looking to make something fun and yummy for the kiddos or trying to impress friends and family with a seasonally inspired recipe, these Gingerbread Waffles are for you.
INGREDIENTS
- 2 cups Krusteaz Buttermilk Pancake Mix
- 1 tsp Pumpkin Pie Spice (or ½ teaspoon ground cinnamon, ¼ teaspoon ginger, ¼ tsp nutmeg)
- 1 Egg
- 2 Tbsp Molasses
- 2 Tbsp Vegetable Oil
- 1 1/3 cup Cold Water
Toppings
- Candied Pecans
- Melted White Chocolate
- Candied Ginger
DIRECTIONS
1. Heat and lightly grease waffle iron with cooking spray.
2. Whisk pancake mix and spices together. Add egg, molasses and vegetable oil. Whisk until blended. Add water about 1/3 cup at a time. Mix until batter is lumpy and thick. Don’t over-mix. Let stand 2 minutes.
3. Pour about 2/3 cup batter onto waffle iron and cook until steaming stops, about 3-5 minutes.
4. Serve with desired toppings.
